Albondigas aka Mexican Meatballs - Delicious, juicy & tender meatball soup!

- Albondigas are a classic Mexican meatball served in a caldo, essentially making a meatball soup. I am not at all claiming my recipe to be authentic, lots of popular recipes will add chopped mint or epazote to the albondigas instead of cilantro & not all of them will use chipotle peppers, but chipotle & cilantro are two of my all time favorite ingredients so I had to use them.

Ingredients:
2 lb ground beef
1 white onion
1 bunch cilantro, half chopped, half for blending sauce
6 chipotle peppers in adobo sauce, divided (optional)
½ cup long white rice
1 tsp cumin
1 tsp chili powder
2 tsp oregano, divided
Salt & pepper to taste
2 eggs
4 roma tomato
6 cloves garlic
1 tbsp tomato bouillon
4 cup chicken or beef broth
4 cup water
2 carrots, chopped
4 small potatoes, chopped
2 corn cobs, cut into
2 calabacitas, chopped
Cooked Rice
Tortillas for serving

We used to roll up tortillas with sour cream 😍 and sometimes butter- especially when they’re fresh! Butter is the best.

My cuñada taught me to add Maseca and rice to the carne. It adds such a rich flavor and smell!

My grandma would soft almost hard boil eggs and slice them up to a nice limabean size, then when forming the meatballs would put a piece of the boiled egg in the middle! Never heard or seen anyone else do this and its my favorite albóndigas secret to share! :D

My (Jewish) grandmother used to put a line of hardboiled eggs down the middle of meatloaf, so when you slice it you get a little bit of egg right in the middle of your meatloaf.
Looks good. I usually use bay leaves or mint instead of cilantro
Russians usually put a little mayo directly into the soup bowl after it’s been served, and it’s so delicious, so I can see how putting it on a tortilla and dipping would be tasty! Thanks for this recipe!

You gotta try adding Queso fresco or cotija cheese in the tortillas with mayo or pepper jack cheese

You lost me at mayonesa on the tortilla lol. Idk that I’d add chipotle to it. It’s too smoky of a flavor to me.
The beauty of everyone being able to cook food the way they want to. If you don’t like chipotle, don’t use it, gonna skip an entire recipe bc an optional addition is used? Go ahead and skip it
@@freddsters I agree with you. I don’t think I could miss out on albóndigas just because of chipotles. After all, cooking should be about making recipes our own and adding or subtracting ingredients.
