My mother made the caldo de albóndigas almost exactly as you make them but she will add bread crumbs to the meat mix (to make more for her 6 children 😂) also, without chile morita because the small children won't eat chile... yet. I make them like yours, too, but without the eggs. No eggs mixed with the meat at all and they still have the same consistency. I never add chile while cooking so each one can add what they want.
I ain’t no Mexican muj but, I does like to cook Mexican food. I does have some children’s and some are Hispanic by theirs daddy and Mexican from Veracruz México and in 2009 years ago I really went to Veracruz México Córdoba and I had went to México City. Sometimes I get in a move to cook 👩🍳 Mexican food now and then I love cilantro 🌿 yummy me. Just finished making this for dinner. I added small pieces of corn and chopped yellow peppers in place of the chile morita. So yummy!

What type of chilie is the morita ?
It is a smoked chile. You can use red chile chipotle that comes in a can. But I use cracked pepper instead.
