Caldo De Albondigas // Mexican Meatball Soup ❤️

  • I can’t tell you enough about this delicious CALDO DE ALBONDIGAS, it is a Mexican Meatball Soup that is loaded with flavor. It is hearty with pillowy soft beef meatballs that are perfectly seasoned and vegetables, you will put this down on your list of favorites. I love to prepare this soup, especially on chilly or cold days, the unique flavor of the smoky chipotle pepper and it’s adobo sauce take it to a whole new level, it’ll have a subtle hint of heat that takes it to a new level, but you can add the Smokey flavor with the adobo sauce and leave the chipotle pepper out too. I love adding a few pieces of a sweet potato to give it a hint of sweetness that will be the perfect balance with everything else. I side it with Mexican rice and freshly made corn tortillas.     INGREDIENTS----------
    1 1/2 lbs. lean ground beef
    1/2 Small chopped onion
    2 green onions chopped (green and white part)
    1/2 small green bell pepper (orange or yellow or Anaheim)
    1 large Celery rib (finely chopped)
    2 large Roma tomatoes (diced small)
    1 large russet potato (diced medium/large)
    1/2 Small sweet potato (diced like potato)
    1 Chayote (peeled and diced) optional
    2 medium Carrots (bite size pieces)
    2 Small/medium Mexican squash OR zucchini (diced)
    Small bunch chopped Cilantro
    1/3 C. Partially cooked rice (i used jasmine)
    2 Tbsp Canola oil
    Salt and Pepper to your liking
    12 C. Beef broth (i made mine with KNORR beef bouillon
    MEATBALLS------------
    1 1/2 lbs. lean ground beef
    1/4 Onion (finely chopped )
    4 sprigs Mint chopped ( leaves only)
    1 tsp Onion powder
    1 tsp garlic powder
    1/2 tsp ground cumin
    Salt as needed
    Pepper as needed
    1/3 C. Partially cooked rice
    3/4 tsp mexican oregano (optional )
    2 large eggs
    MOLCAJETE SPICES------------
    3/4 tsp whole cumin
    3/4 tsp peppercorn
    2 large Garlic Cloves
    1 C. Water
    1/4 tsp salt (optional) helps to grind

    I can't wait to make this soup! My late mother in law used to make this when she'd come to visit us or when we'd go to Tucson to visit them, but she never got around to teaching me how to make it before she passed away. =))

    I just finished cooking my four hour chicken with herbs and mixed variety potatoes soup. My male friend took two bowls and was stuffed. He said it was "gooood!". And it is filling.
    I forgot to record it. 😂 Maybe another time. But it really came out smashingly good. I had two bowls, too.
    Your caldo de albondigas looks great. I think my mom made it but with square shaped or cubed beef steaks. 😄😇

    Rachel, I made this soup last night for dinner, my 2 sons love this soup so much. I could eat this all winter long. This soup is so hearty the way you make it and very filling. I love the Cilantro so I use it.

    I love caldo de albonigas and I especially love your version of it my dear Rachel. Love the addition of the chipotle to it plus the mint to the meatballs.       Thank you so much for your comment my friend, it is absolutely delicious, the mint adds a refreshing flavor to the meat balsamic, but not overwhelming and the chipotle peppers with the adobo sauce can give it a good kick, if you don't want the heat you can leave it out and just add some of the adobo sauce for the Smokey flavor (still adds a pinch of heat). I hope you get to try it as soon as your kitchen is completed, I bet it's gonna be beautiful. Blessings! ❤️

    It is interesting how we all probably make Albondigas a little differently...but they all turn out muy delicioso!! I love Cilantro and never thought to put it in my meatballs nor did I know to cook the rice before mixing it into the meatballs. I had also had never sautéed the onions, spices and tomatoes together before adding the broth...so guess what I'm craving now!? Here in Central California we have been having major rain so Albondigas would really hit the spot now!! Love how organized you are and how clearly you give instructions. I would eat in your kitchen too as it is so clean!! Thank you for all your recipes and calm personality!!

      Thank you so much, I did add the mint in my meatballs, I hope youvtry it. I partially cook the rice before adding it to my meatballs because it gets softer in the meatball and your meatballs will be so pillows soft. I always saute my onions first, because they sizzle in the oil and release their flavor along with the the other vegetables and spices my friend, let everything release their flavors gently and you won't have to wait till the next day for the best flavor. I hope you love it as much as we do. ❤️

    Rachel, thank you for your great tips on this recipe. It’s on the stove right now. I used the veggies I had on hand but your tips on cooking the rice and adding egg makes a huge difference. All 18 of my meat balls are swimming in goodness. I had carrots, 1/2 small cabbage, & potatoes. I used a 1/2 can Pato sauce since I didn’t have any tomatoes and everything is simmering like a Mexican Momma’s dreams. 😂❤🍲

    Hi Rachel, I made your Pozole Rojo in Week 1 and in Week 2 I made your Caldo De Albondigas. "My Roy" absolutely LOVED it. The combination of all of the spices and vegetables along with your cooking methods made this soup so flavorful. This has definitely become one of my favorite comfort dishes in this cold Chicago weather. As mentioned in my Pozole Rojo comment, I plan on making at least one of your recipes per week. This is becoming a labor of love and it is truly making me happy to see my husband enjoy the outcome! Thank you so much for being so detailed and guiding me step by step. On to planning my next experience.

    You must NEVER leave the kitchen. Mexican food is so delicious yet so labor intensive. I have made several of your recipes and they are always wonderful. I would love to know how to make that wonderful Pollo Loco sold in restaurants - some kind of grilled chicken pieces with a sauce. The chicken is flavored so well if it is done right and not too soupy. Thank you Rachel.

    I made this today it was delicious my husband loved it. Adding mint to the meatballs and chipotle in the soup made such a great difference in the taste. I added some flower to the meatballs and some tomato paste to the soup. It was really tasty.
