Hi, just discovered your channel today and now I’m binging and excited to have you guide me to a healthier lifestyle. I’m also Mexican and have only ever had Albondigas in a soup with clear broth and lots of veggies so I’m excited to try them in the tomato sauce with the surprise hard boiled egg (also new to me). I love potatoes so I like the tip of using it as a binder as I have always used rice.

Mexican here: I always sealed the albondigas first on the pan, set them apart, cook the sauce on the same pan and when simmer, put back the albondigas and let them cook like 30 min. De-li-cio-sas! 😙🤌 *chef kiss
100% if you have extra time searing definitely gives a little extra flavor. The difference is so subtle to me that it's not worth the mess for me personally.
