Albondigas | Mexican Meatball Soup | Jenny Martinez

- I would describe this meal as the PERFECT meal for a rainy day! Here in California, rainy days are rare but when ever they come I take advantage and make this delicious Mexican dish. I hope you guys enjoy this recipe as much as I do!
Full Recipe:
Ingredients for meat mixture
3 lbs of ground beef
2 sprigs fresh mint
2 roma tomatoes, diced
1/2 large onion, diced
1 1/2 tbsp garlic powder
1 1/2 tbsp ground black pepper
1/2 cup white rice
1/2 tbsp dried oregano
1 tbsp salt or beef bullion
2 egss
Ingredients for Consome (tomato soup)
5-6 ripped roma tomatoes
1/2 onion
3 garlic cloves
2 tbsp beef bullion
1/2 tbsp dried oregano
4 cups water to blend
In the pot add 4 liters of water
salt to taste

My nana always says the meat is supposed to go first with the potatoes and carrots because they take the longest, the calabazas go last. But everyone does it differently

My mom makes this and it’s the best, of course everybody makes different types of albóndigas. My mom blends chipotle chilies with all that ingredients and she puts boiled eggs inside the meat Omgosh it’s delicious!😋

What do you recommend if I don’t have fresh mint or the beef bouillon?? Is dried mint and chicken bouillon ok ?
If you like those foods, then chances are using them would be a good idea.

I make my tomatoe sauce thicker... And you don't mix it like she was doing it, because the meatballs will rip apart 😅 when they are not fully cooked 😂
