Let me tell you, I was hesitant on mint but it absolutely gives it the best flavor! I put mint leaves in the meat and cilantro in the caldo.
I remember the last time i ate that 🙂. It felt like my mom made it specifically for me. I was a little fat boy standing next to her while she cooked and my mouth watered. She served me a bowl and I sat at the table by myself and what felt like the only time I ever tasted that delicious food. It was soooo good and to this day I don't know why or how my mom was so calm cooking for me.

My friend taught me how to make Albondigas soup 30 years ago and it's been a family favorite ever since! I top off with raw diced onion, squeeze of lemon juice and fresh chopped cilantro then eat with corn tortillas! 👨🍳 💋
Made this today! Thank you so much for the recipe. It was a little different than I’m used to but it still turned out great. I’m definitely making this on the regular! The only thing I would note is that this makes a huge pot for like 5+ people. I have a small family and I have a lot left over. I’ll be taking some to my grandmas for her to try tomorrow! If you’re going to feed 4 or less, it might be good to cut the recipe in half!
I made this without the chipotle peppers in adobo and it was still delicious 🥰❤️ highly recommend! I added more chicken and tomato powder towards the end for more flavor, but to each their own with that!

It came out really good. The Chipotle kick was welcomed by my family and neighbors. I might have left it too long as it did not come out soupy, but it was still good. Cant wait to try it again.

Made this today. Was delicious. Used chili de Arbol instead of chipotle peppers. Try to use fresh corn if you can, I used frozen corn because the store did not have fresh, and the frozen corn just isnt the same. I got my family to help with all the chopping 😊
Another Hit. I made your caldo de pollo before and loved it and this was delicious too. I just cut the recipe down to 1 pound of beef and 1/2 a cup of the rice just because only me and husband ate. He approved so will definitely make again. Thank you 😎

We try not to eat as much red meat so we subbed the ground beef for ground chicken and it was just as delicious. Thank you for another super delicious recipe!!!! Also quick tip: instead of adding egg to the meatballs I added 1 tablespoon of flour 😉

I like using up all the veggies I have left for the week. I like mine with mint and oregano and I add fresh cilantro at the end.
