This born and raised Bermudian approves of your technique. Taking extra time for the stock using heads as a previous commenter said really does make a tasty bowl to world class chowder. I use rockfish but now living in South Carolina I can get away with snapper, grouper or surprisingly Alaskan cod.

I give you a one imp tip to make a chowder use only fish head boil add salt, bay leaf , whole black pepper, 🍋 lemon stain keep stock aside remove meat use less veg add fish stock make lite not very thick.i am from North India worked in bermuda more then two decades left in 2012 settle back my home town you are growing 🍅 and veg so healthy in your garden India lock down because Corona virus that's why getting time to watch video and cooking thanks.
