    Its crazy how versatile these really are. I did a brisket using the snake method with chunks of hickory wood interspersed. I got about 10 hrs i think, and had to add a new partial snake, but it worked. had a water pan in the middle. This method you've shown here looks to be far better. this could really work for those 16 hr brisket at 225 to 240f. temps.

    Thanks Tom. Used my DIY per your instructions on 11/08/2020. Worked like a champ. And yes, 135 briquettes is a little over double 65 briquettes! (1:04) Lol.

    Thanks Tom, I have had a diy version for some time now. It uses way less charcoal than anything else. Try moving the temp probe around and you will notice how even the temp is everywhere on the grate. Outstanding Mr Horsman, cheers.

    I saw you make the deflector plate some time ago. I can't remember the details but 1) it looks good 2) it obviously does the job and 3) I bet it turned out a LOT cheaper than buying a Weber deflector plate, and the same will go for the charcoal ring you made.
    Just bought a new Weber Master Touch last week but have not yet fired it up. New garage door being fitted tomorrow. Makes sense to leave the Weber where it is, pristine and untouched, for a few more days before its planned storage space in the garage becomes available to it (obviously we never put the 4 X 4 in the garage....!).
    Don't worry - I have other BBQs so the Master Touch will make it seven in total, though two are on their last legs and will "walk the walk" when the Master Touch us up and running.
    I have a little Weber Go Anywhere (charcoal) grill which we use when camping/Caravanning, together with a little fan-assisted charcoal Yoga Grill (no lid - small items like burgers, sausages, , cutlets, chicken drumsticks etc only) and a South African LPG Cadac (they love their "brai" and it can be used as a BBQ, a wok, a frying hotplate, a paella dish etc). I have a small table-top size Kamado type BBQ ordered and due to arrive this week, too. The other stuff are just cheap basic charcoal BBQs but they have done their jobs over the last few years. The Cadac is probably 25 years old now, and still fine - but I use it more as a stand for the Weber Go Anywhere grill - when camping/Caravanning (ideal height!), though when I go to Northumberland for 3 weeks at the end of July, I will probably use the Cadac in its own right (for breakfasts).

      Tom Horsman would you be able to do a cook with the SnS in a WSM? I have a 22” WSM with a mod to fit a grate 5-6” below the top grate. I’m currently using charcoal baskets to grill on it and I’m wondering if the SNS is a worthwhile upgrade. Thanks. BTW I really enjoy your channel.

      Tom Horsman unbelievable!!! 😎 so what I have learned is that the WSM does a better job as a smoker than a kettle, which one might expect. Perhaps one of your followers might be able to enlighten me on how the WSM would compare to a kettle/SnS combo. My hunch is that there would be only a marginal difference.

    Hi Tom. I use the old Weber wok (stainless steel) along with the fire ring from smoke ez . Works great. Unfortunately they don’t sell that wok anymore.

    Hey Tom! Very Impressive! A full sized basket with a large heat deflector increased the capacity of the kettle, who wouldn't want that!
    There are a lot of us out here that have been doing this very thing.......it's the way to go! Now if only Weber will add a stoker port on it's next generation
    of this kettle? 😁 \m/

    Great vid. I recently discovered this was a thing after seeing a new Master Touch Premium in the store. I got excited to use the Weber version for my kettle and the parts still aren't easy to buy. Love the DIY version.
    Cleaning the ashes off the vents seems like a big negative. After seeing all the dust come out I can only imagine that gets on the food inside. Would have to remove the food while doing that. Perhaps a mesh on the bottom grate could hold that back.
    Just looking at alternatives vs my 22" WSM. Thanks for the vid.

    For 35 dollars I got Slowhand’s on Etsy. It’s actually wider...the charcoal grate fits inside, and is about 4 inches tall. I use a pretty heavy gauge 19 inch pizza pan with a 1 inch tall lip, so I can put water in it and catch drippings like a WSM. It clears the cooking grate by about 3/4 inches. I haven’t counted the amount of briquettes but I’m guessing it’s a little bit more you can fit in your DIY one. He actually makes a kit that lifts the cooking grate flush with the top so you can really pack in the charcoal or put a taller drip pan, etc.

      @@TomHorsmanAmateurBBQ it’s a really good solid pan. I thought it might be flimsy because of its size but it’s not. I just foil it criss cross both top and bottom to make cleanup easier. Grease/water still gets through as the foil is only about 16 inches wide so liquid still snakes under it but the pan remains very clean and easy to maintain with the foil.

    Impressive Tom Now you have to show video to create smoke 💨 setting on regular kettle. I think those are needed or the ash chokes out fire 🔥 on long cooks. You should have thrown a 8lb butt on. Great mods Great Video.

    Nice test brother, My basket and diffuser in my 26" really kicks butt! I saved so much money on charcoal this year because of it. I did get warping in my pizza pans so I put a 16in pizza stone inbetween the 2 and bolted them together, works awesome, Cheers!

    Got a question. If you cook a brisket with your setup, looks like no room for a pan to catch the drippings. When you clean out the grill after the cook, is the pizza pan full of grease to the point it’s hard to take out without spilling grease everywhere?

    Tom, thanks so much for all your work ! I , too wonder about the Weber designers? I was expecting big things from their new pellet grill this year, and it flopped ! This mod is fantastic , even if Weber sold it, they would charge 10 times what it can be made for as you have shown ! I am a huge Weber fan , but they need to step up their game, or they are going to be left behind ! JMO

    Is it better to start this with a firestarter or a chimney? Reason I ask is I cook hot and fast and it I usually start a chimney to help start it but it seems to smoke for almost over an hour before calming down. What would you recommend? Thanks

    Thats brilliant! It won't take weber long to realise their losing out and start selling it separately.
    One question tho how did you get your weber sealed so tight my master touch bleeds smoke around the rim and I've adjusted the back twice now with no luck. Cheers

      Just buy a grill gasket from Amazon. Around $10 for about 15ft roll. Enough for 2 grills. Clean the edge of your lid with some metal scrubber and stick it on! Super easy! Gl

    Okay so I got myself a ring and diffuser plate for the kettle. This is my second time using it and the kettle took more than 2 hours to get to temp. This also happen the first time. What on earth am I doing wrong? Cant get this thing lit! Advice will be greatly appreciated. Today i aborted the charcoal ring, but im gonna be eating late! 😂

      @TomHorsmanAmateurBBQ vent settings wide open. Charcoal is BnB briquettes lighting about 10 in chimney and putting the ashed over briquettes in the middle of the ring. I need to light more briquettes don't I 😳

      It doesn’t make sense to me… I put 4 b n b in the middle use a torch to light, surround it with 3 wood chunks and more b n b leave both vent wide open and within 20-30 minutes I’m turning top vent to 2/3 to 1/2 and works fine.

    I have a 18 inch weber kettle. What size charcoal chamber and pizza pan would I need to do this a 14 inch?

      Thanks for Watching! I’m not sure,, I don’t have an 18” Weber kettle. You should size it so the diffuser has about an inch clearance to the side of the grill. The basket should be sized so it doesn’t touch the grill grate, about a 1/2” clearance will work
