Today, Trevor is reviewing the Weber Master Touch Series versus Kamado Joe's, The Kettle Joe! He'll start out by reviewing the qualities of the grills and what sets them apart from each other. Afterwards, you know it, we're grilling steaks on them! Let's take a look at both of these grills and see what happens.
Trevor starts out the review by taking a look at Weber's Master Touch. Weber has amazing enamel making it scratch proof and comes with a 10 year warranty. They're a very well known company that has a great reputation. Under the hood of the Master Touch you get warming racks, cooking grates for wok cooking, charcoal baskets, and a cool agitator to dump your ash into the bucket underneath. It's an affordable solid grill. You are getting what you pay for, but people make amazing food on these grills.
Next, Trevor takes a look at the Kettle Joe by Kamado Joe! This grills is similar to the Weber. Its the same 22 inch diameter, but comes with a lot more features. First off it comes with wheels, a cart, and side shelfs. Another cool thing about the Kamado Joe brand is that they sell a lot of accessories. You can see we have the Slow Roller that fits on both the Kamado and the Weber. That is so cool! The kettle Joe has a ceramic fire box allowing it to retain heat better. Also in the fire box, there is enough for off set cooking which is a useful feature. These are both really nice grills, but lets see how they do cooking some steaks!
So, we want to start off by saying it was freezing and this was not the most successful cook. Trevor had a really hard time getting the coal to catch and get the grills up to temperature. He did make use of a new tool Ember's is selling called the Looft Lighter. Anyways, Trevor didn't really get the seer he was looking for. The steaks were still delicious, juicy, and cooked properly, but he didn't get the screaming sear some of the other grills get. Please let us know some of your kettle or charcoal tips for getting these things screaming hot.

I consider myself to be somewhat of a grilling enthusiast especially when it’s sunny outside.
When I got my first grill I was excited and had a bunch of friends over for a BBQ only to realize that I had no idea what I was doing. I was pretty embarrassed so I decided to really learn it, watched loads of videos and did tons of trial and error.
The most important thing about grilling is temps (duh) get an instant read thermometer and keep and eye on your cooks. Food will be juicy and delicious every time.
Next, get a charcoal chimney and fill it with any charcoal. Put some paper or wax cubes in and light it. Now go to your garage and drink 2-3 beers, when you’re done with that pour the lit coal in and enjoy!
The only way to make good BBQ is to make a lot of bad BBQ!
Finally,
Kamado is neat but the Weber is so versatile I don’t see a reason to spend 2x but different strokes for different folks.

On real cold days leave the lid slightly of kilter, so there's a ~1/8-1/4 gap, that will allow a lot more oxygen in there and you'll be pinning the lid thermometer in no time, one of the best tricks I've learned for my Weber!

As many have said, the primary problem here is not waiting long enough for the charcoal to fully light. If you had, you would have found that both grills would have been much hotter than you experienced. I have used a Weber kettle for 20 years; I just moved to the kettle joe a few months ago. I think the real problem with this video, however, is you didn’t do the right tests to highlight the differences. The ceramic lining in the kettle joe allows for stable temps for much longer times and the venting system is much more precise allowing much greater temperature control vs. the Weber kettle. For as hot as possible grilling directly over hot coals, you won’t see much difference. If the fire is started properly, they both do a good job of getting hot and searing meat. But if you want to cook something slowly over long periods of time, the kettle joe is better, hands down. I would recommend redoing the video but also just comparing temperatures over several hours and do something slow like a brisket or a turkey. That will highlight the differences. Not sure the kettle joe is worth the price premium if your goal is simply hot fire to grill burgers…if you want versatility to do much more than that, then the kettle joe really works well at a fraction of the cost of a full kamado grill.

Always get your pit up to temp before adding the meat, no exceptions. With a kettle, lid off build the fire then add the lid and wait to temp of your liking. Completely different than a Kamado style of start up. And the most important thing in grilling/ BBQing it doesn't matter the brand or style of cooker! As long as your out doing it and learning the pit your using you will always make great food!

Great video. I live in a very cold part of Australia and had all sorts of problems with Kettle design. After many frustrating cooks I went to the Kamado design. I only use Kettles now in our summer. I felt your frustration and enjoy your honest and unbiased reviews.

@@MarkSmith-js2pu G'day Mark, I live in the Ballarat Region in Victoria.Australia. It gets cold, but different to the cold in the States. Many people from Canada and the States (when they come here) really notice the cold as it's a WET cold and not a dry cold with snow.
We also have strong winds most of the time, so our wind chill factor is usually below Zero so much of the time.
most of Australia gets hot in the summer, but we also get cold due to elevation and our closeness to the South Pole.

I got the Kettle Joe today, been a Weber guy for the last 20 yrs. Christened it with some Sirlions about 1.5 inch thick. I used a chimney starter like always. Grill was up to sear temp in 30mins. Used the devide and conquer system with low grill for sear, 3 mins each side then on the higher rack for 3 mins. Rested for 5 mins & got to say they were as good as any ive done on a Weber. One thing i will say is, the devide and conquer system is a great advantage over the Weber grate.

When I did steaks with a kettle, I used a full chimney of charcoal and filled the two baskets with it. This creates a sear zone that should work regardless of the outside temperature, only the time time it takes to sear may vary slightly. After the sear I pushed the baskets aside, probed the steaks and brought them up to temp with indirect heat. If you know your grill and the right temp to pull, this should work every time.
Otherwise the slow roller may be functionaly great but I think it looks ugly. If kettle, I would go with the Weber for sure.

Indirect at 250 til 135. At 95 start a full chimney of lump and let it go til ashed completely. Seems like a waste but you will be able to sear in a blizzard this way
Try lump, it burns hotter. This also misses the advantage of a ceramic firebox as the Kettle Joe can go to 700f vs the enamel on the kettle to 500f. No issues searing at -30c where I have one at my cottage

I did ribs the other day on mine at -30c too. The biggest issue I had was my wireless thermometer needed charging but was too cold to take a charge. Other than that it held 250 like a champ. As for the steaks a chimney works wonders.
Weber kettles get far hotter than 550f without causing damage. I've run multiple kettles way over 700f using wood, and one I turned into a pizza over and with the aid of a blower reached temps close to 1000f on a consistent basis, although I did melt a handle 😂
A full chimney with vents wide open would get to the nice searing temps. That said, my kettle and SmokeFire sit under covers until the weather warms up in Chicago. Bought a cheap Akorn kamado style cooker for the winter months which has out performed my expectations; holds temps like a champ and the food is excellent. Might upgrade to a ceramic kamado as I am having so much fun cooking on this style cooker.

Our KJ’s with the top vent wide open IS our charcoal chimney. As demonstrated, there’s simply no chimney effect with a kettle grill, so the lit charcoal needs all the air it can get, grill uncovered, at least until the starters burn out. I also find that briquettes take longer to light than lump. Anyhow, loved the honest showroom floor comparison! There’s no way I’d spend $500 on a kettle grill with only half the warranty as a Weber, for good reason as demonstrated with the drill bit! If my daughter in Denver ever gets in a house I’ll try to remember to send her your way.

@@embersliving if I was to make a request, it would be for more Kamado Joe cooks without the SloRoller, and I’m not talking about KJ accessory infomercials I see on so many channels. I sort of binged yesterday and it looks like I’m gonna have to start watching Big Green Egg RUclips’s to learn how to cook on my new KJ Classic 1 😂.
For basic steak grilling, I keep the grill open (maximum oxygen) during the sear. Once I like what I see, set it to the cool zone and only then close the lid to get it up to preferred internal temp.

I have the Weber master touch and I can say that you just need a Weber chimney starter and good lump charcoal and you will have the best searing experience ever. I use mine since 3 months now and I can testify that Weber rocks plus I’m learning how slow cook and even tho it doesn’t touch a Kamado joe it still does low and slow great.

On the kettle joe I usually open the lower and upper vent more, and I have added filt seal for the lid. The I can get it up to 300 Celsius in -10 celcius weather.

Simple solution to increasing oxygen-remove the ash can and set it below the opening to catch any ash and charcoal that falls.

I have a Kettle Joe and always have issues getting the unit above 450 degrees and I live in Florida, I’ve tried everything and it sucks as a hot and fast cooker. What is a great hot grill? I’m looking at the Pk grills since I have a slow roller and a pellet grill I just need a fast grill and searing station.

One thing i would like to know it the burn time with the same amount of charcoal in each, because of the way the ceramic charcoal basket shape it you cant do the snake method or stack charcoal like the weber, and if you are really wanting it for slow and low cooking is it as easy to do as the weber because of basket shape

I use a hair dryer with an extension cord to blow air into the coals. It gets to 1000F to accelerate the chemical reaction of the coals by pushing more o2. Also not sure why people use lighter fluid, I save the oil I don’t dump down the drain and use it to ignite the chimney starter. I don’t use briquettes due to chemicals. Then i compost the wood ash (lump charcoal can be composted)

more charcoal and lighter fluid. leave the lid off for more oxygen till you get a good hot bed of coals. Your channel is why I bought my Weber Genesis 2 SE, and I love it. It's just freezing a** cold in Ohio right now. But I've cooked on it a bunch already since Christmas. Ready for Spring time! Thanks!

Try using the Kamado Joe charcoal basket because it will give an air gap through the bottom and allow for better airflow to help the charcoal burn hotter and quicker. I have seen this used by the Smoking Dad BBq guy on a joe jr. Hopefully it will fit the Kettle.

Kettle Joe retails for $AU1299, from the same store for the same price you can get the Classic 1 for the same price with the D&C, and from another store you can get it even cheaper without the D&C for $AU899

We got lots of different info on placement of the charcoal to start it up. Next winter we'll give it another go!

It looks like you have the lid dampers shut. You have to let the fire breathe if you want higher temps.

It's not the cold...the coal should have been fully lit before putting it in the grill, ideally with a chimney. That said, it can also be done without a chimney but you need to mound the coals and then use an oiled newspaper/paper towel or a firestarter tumbleweed/cube to aid in quick ignition. After it is fully lit, you can spread the coals out and add more fresh coals on top to raise the temp even more ...this last one is only if you really need it IMO
Also, when lighting it in the firebox, keep the lids open till fully lit and then close to bring it the chamber up to temp - by keeping it closed thru out the lighting process you are actually slowing down the process.
Lastly in windy or cold situations you can crack the lib a bit on both to aid in the fire burning hotter.
These tricks all work to make for a better and easier cook on a kettle no matter the temp outside

I also thought of another reason it didn't work - yes its cold, yes it's windy, but it's also a mile up from sea level...that last one probably had a bigger impact and so the coals probably needed an assist to get lit ...also more coals to make up for the lower burn rate die to the air oxygen levels maybe

FYI kettle joe has not been out in the market for over a year, yet. I do own a kettle joe that cost me $100. so I might be biased here lol. What I do to get it hot fast during cold temps is I use the Grill blazer Grill Gun to start my charcoal. Fire starters is cavemen thinking.

Honestly.... If they tossed the indirect section of the Kamado out, And dropped the price $100 and just made it an accessory it would be a killer deal. I have had mine for over a year... And the indirect section literally sits in the garage unused.

Every and I mean Every cook doesn’t go perfectly. I find that to be perfectly true. Each one is different. That’s why it’s fun.
Don’t close the lids when starting your fire. Also for steaks unless you are indirect you should keep the lids off. If you are smoking close the lid. Not sure why someone doing a comparison video doesn’t know this

From a cooks perspective the meat is burnt, eating burnt meat is not something you wanna do if you dont want cancer. I think i prefer my sous vide and sear on the cast iron instead. Not sold on getting a charcoal smoker.
I dont think burning your food gives you cancer. Smokers are supposed to be low and slow

I use lighter fluid in my weber and usually get my coals screaming hot at about 20 minutes.
Some people dont like to do that. I dont care, but idk some ppl do some crazy methods.

the fact that the kettle joe scratched so easily is such a turnoff. For the price premium, i expect the kettle joe to be better than weber in all aspects. Right now, it doesn't even seem to hold temperature better than a weber.

Use lump.
Use a fire chimney so your lump charcoal is completely ignited.

Weber summit or kamado vs kettle joe would be interesting to watch. I own the kettle joe and use it as an all around grill and love it. In Sweden where it is cold it is nice to have the ceramic insert.
Does the ceramic insert hold temperature at all? The heat would still rise and escape from the top metal lid wouldn't it?
The summit would be the clear winner in my opinion, it’s more insulated and has a built in Burner
