  • This might be my favorite recipe or thing I've cooked to date! I collect some grouper scraps from ‪@KeyWestWaterman‬ after he and Kelly Young and our friend Miles went spearfishing. I make some thing. I've always wanted to try to do pot pie, but with fish, I make everything from scratch, including the piecrust.

    Incredible!! I’m headed to the local seafood shop tomorrow to get my grouper. I’ve been wanting a fried grouper sandwich & fingers for weeks & now I have a 3rd recipe. Thx for sharing.

    I agree with everyone on here about the pie crust...Beautiful! I was trying to think of something else you could make sometime using that same pie crust and was wondering if some of the crabs that Aaron & you catch in the mangroves or the night lobsters. I think you call them Spanish Lobsters. I think that would make an awesome pie. Keep doing what you're doing because I watch everyone of your videos.

    That is such a great idea. We caught a bunch of grouper a couple weeks ago and we made Maryland "crab cakes" out of the collars and cheeks. They came out amazing. I will have to try the pot pie recipe next time. Great job on the crust for your first time making it. Keep up the great work.

    Will, #cookingwithclams I have watched and enjoyed your channel for quite some time now and your exquisite techniques on all different types of foods and dishes has been absolutely amazing but I think this one has topped 99% of previous dishes in my opinion. I have made your Lobster Fra Diavolo and that was amazing! I am so intrigued with this one! I literally said when you finished this dish and brought it out into the sunlight this is totally, and pardon my words, but totally kick ass! Definitely my favorite for sure!     My mouth was watering watching you guys eat that. I’m thinking the only fish I could try this with in PA is catfish, and I’m not really sure how it would turn out.

    Good lord - BRILLIANT! Yet another out of the park + incredible inspiration for a seafood (lingcod) pot pie. The ONLY flaw is RUclips needs to figure out how to send smells through the internet. Loved that you worked through the dough for us and produced an exceptional looking (and tasting) pie. Well done Will, another wonderful recipe, thank you for this one.

    That’s a really good idea! We don’t have grouper here, but I can substitute halibut or salmon. Since my husband used to cook for 25 years, he is the cook of the household since I am mobility impaired. Mushrooms and thyme would be a good thing plus veggies w the halibut,and fresh dill with the salmon. There is a brewery /restaurant nearby that has thyme and sage in their chicken pot pie. The make a flakey type of dough with cheddar cheese mixed in the dough for the top. It tastes awesome! Greetings from Seattle area!

    You got your inspiration from the chicken pot pie and then focused your creativity on making a grouper pot pie. That was so well done! Because of your Italian heritage, I thought you might choose fennel also as one of your herbs?

    so so good Will! also i totally agree making pies/quiches/pot pies When they come out great like that one, gives you a weird sense of accomplishment that few other cooking tasks do. the only thing I would add to recipe because you are in Caribbean is some heat! i.e. chilies but that is my island side talking.

    Next time freeze the butter then use a cheese grater or grater attachment on a mixer and shave the butter into the flower. Makes it a little easier to get the pea sized pcs incorporated with the flour.

    My taste buds and stomach is screaming for a taste. Have you ever made a sea food lasagna white or red sauce? Just an idea because I have eaten some before white sauce with stued tomatoes, shell fish and fish meat. I have not seen one since 1992. Thank you for your content.

    When your gravy breaks like yours did, do you add a bit more half and half to re-emulsify it, or did you leave it as is?

      It was the fat from the grouper so the butter to flour was off. So I just skimmed the oil. But it would have needed more flour to grab that oil

      Chances are too much liquid evaporated and you can add a little more warm water to suspend the fat

    After handling raw fish, you grab your salt and using it without washing or even wiping your hand. Tomorrow, that shaker will have rotting fish alike all over it. I would not eat anything you cook. As a supposed cook, you should know better and as someone posting instructional videos, you should definitely know better. Perhaps you should take a food safety course...

    Cutting the cold butter and shortening into the flour makes the best pie crust. I've heard tapioca can help a crust. Need the right tools. Good Luck.

    I have a video idea for you. A Montauk razor clam catch and cook. Or maybe not cook. Raw Razor Clams with Pickled Grapes and Cucumbers, Forget about it.

      @@CookingWithClams yeah, in Montauk. Lots of Hard Clams. The Razors are rare and in only one or two spots in Montauk. People use Razors more for bait then anything when coming across them.

    I grew up on Pennsylvania Dutch squirrel pot pie and that crust looks pretty close so great job and wonderful use of the underrated parts of a great fish!

    That’s a completely legitimate pie crust! My Grandmother would have been proud of you! It was multitudes better than my first attempt. Once again you inspire so many of us in the kitchen. I’m going try this soon with halibut and salmon. Cheers!

    Hey Clams, love your videos. Easy way to mix lard, salt and flour, simply put all in food processor and pulse 4 to 6 times... easy peasy. I love Aaron's channel as well.
