    Wow that looks so Delicious, deep fried lobster is my favorite way to eat it! General’s is one of my favorite Chinese dishes too!

    If you pull the tail fins off you can take your middle finger to “goose” it as my uncle taught me to remove the tail in 1 piece

    That was a fantastic video! General Tso’s Chicken is about my most favorite Chinese dish. General Tso’s Lobster would be over the top! And BTW, that’s a nice knife you got there. And I don’t know why I’m so concerned with your knife (maybe it’s because I’m a knife sharpener, IDK) but I just cringe when somebody uses the sharp edge of the knife to ‘corral’ the cut product on the cutting board. It just destroys the sharp edge I no time. Why not use the backbone side to scrape with? It’s just as easy. Your knife will love you, and you’ll have a sharper knife for a longer time. Just my $0.02 worth…

    Here in Hawaii we have two types of lobsters (slippers and the clawless spiny)...we all think steaming is the way to go but this may make us see it differently.

    Great video Will! It still blows me away when I watch you cook, you explain everything so well. I still wonder why you cook the lobster with the rubber band still on. Here in Atlantic Canada, that’s an extreme no no.

    A fun one - that was really a crunchy out come. Since I love asian cooking I will need to try it. Also, is that a new knife. Looks very nice - maybe the reason I don't see you cleaning fish with it. Curious, do you like the Japanese style handle or one more like on the Misen?

      I go back and forth. I like the German style handle but Japanese style blade.

      Me too. In fact I just got a new one that is exactly that. A very sweet knife and is VG10 steel so it should hold a really nice edge.

    I’ve fried lobster tail without boiling it first. Am i doing something wrong? I thought it would be over cooked to boil it first.

      Not wrong at all! I par boil it just to get some moisture out

      I usually only boil spiny cause you can add salt. The Maine lobster is way more briny
