I spent part of my teenage youth living in Key West as a military kid and took full advantage of the experience from fishing, spearing, sailing, diving and everything in between. Grouper and snapper are my favorite fish followed by goosters bathed in butter on the grill...doesn't get better than that! I love what you cook and the way that you cook it. Can I do that broth steamed rice with basically any type of fish? I really like the thought of that I get racks that pile up real quick. I end up chumming them due to freezer space. I tried to make soup a couple times it came out terrible I think because I left the gills in the rack idk
The gills can make a broth bitter and give an irony liver taste. I do t see why you couldn’t do it with any other fish. You want something fatty and oily though so it doesn’t dry out

I worked as a cook most of my life but never thought I would be doing it for this long. I had to cut down my hours to part time when I was 59 and am now 61. I always loved to cook, but it shouldn't be a long term career choice. It takes a toll. Wearing masks and sometimes face shields also during covid for three years made it tough for me to work in an already hot environment, made it difficult to breathe and work a physically demanding job. My employers seem to be hiring people in their late teens and early twenties and they are so lazy and my fellow employees who are over 40 years old are picking up the slack. It's time to look for another job, until I turn 65 and eligible for Medicare.
Haha it is pronounced key-ni... all you had todo was ask ..i will send you some halibut and king salmon, Rock fish from my trip last season. I brought 400lbs of fillets back to Texas.
@CookingWithClams yup we don't take any luggage. We bring back coolers instead. Entire family goes up every other yr. I have a sister on Kodiak and my mother in law lives in Homer. On Kenai peninsula. I also have a sister in law that runs processing plant so we pick up crab and scallops while there. I have two comecial freezers in my garage full of fish ,shrimp, crab, scallops, dove, Qual, pheasant, deer , caribou, elk, axis deer and pork. I don't buy store bought meat..
Learning any sort of trade back in the day was brutal. But to be honest it’s how you found long term dedicated people who stuck with it. Watched a lot of people leave within the first week and find a whole new career path. Not saying it was right, but worked to a degree

What a great episode. Interesting journey you have been on. I started fishing in the keys’s in the early 70’s when the Travelidge motel cost $12. I belong to a great fishing club that taught me so much. We went all over the keys, Bimini, Flamingo, Stuart Great Harbor Cay and caught great fish. Yourchannel reminds me of the fun I had. Glad you can take a break and enjoy your life in such a beautiful spot.
What exexangler says - this is real. The way I fish and hunt then try to cook something to share with family and friends. Not at your level Will, but you start with great ingredients, treat it right from harvest to table, it's hard to go wrong. Don't cut out any of the what you might think is mundane or not interesting, we like coming along for the entire journey!

It’s a trip listening to your history. Idk what happened with my grandparents. My grandma is from Sicily. My grandpa was from near Naples and he got sent over to Sicily in ww2. We actually have all these war photos as he was stationed in Taormina where the white lotus show was. U gotta watch that if u haven’t. Anyway I got off track… they didn’t teach me shit about how to cook! lol. Idk wtf they were thinking. My grandpa was a great cook. Maybe because they thought “were American now” or something. I really dont know. Or maybe just because I didn’t show any interest in cooking. Anyway,it’s good to hear stories about families who’ve handed down their cuisine properly. I feel robbed. Gawd I’d love to know how they made those gnocchis for one, I mean I could probably get close, esp with the marinara but I don’t think I could recreate most of those dishes. Did u guys have a lot of caponata growing up? lol. We always got sent home with a tub of that. What about capreta. Ahh man, I had no idea what I was eating when I was a teenager. I wish I had some of those meals back
I’ve actually been to Taormina! Incredible place. My family is from le cara fridi. My grandparents had a huge garden, so what we mostly got was a never ending supply of stewed tomatoes that would then be turned into sauce. I think the main reason my grandmother taught me how to cook is because I was the youngest child, and left out of a lot of the things the other kids did, so I would just hang with my grandmother.

I love the feedback and honesty. Hopefully this enlightens all of us fans as to the difference between cooking for passion and cooking for a job. I also work in the food industry but on a slightly different scale. While I’m not at your level, I love to cook for family, friends and small events. I’m often asked why I don’t open a restaurant and it’s for the exact reasons you outline- I cook for the enjoyment and satisfaction of serving simple and delicious food to my friends and family; I think the stress of “performing” in a commercial environment would take all of the enjoyment out of it and food prepared without passion is just mundane. As always, thanks for sharing

I really enjoyed this one. Cool to hear some back story. As tattoos go I am also in my 40’s and I’m still getting them. I didn’t hit it as hard as you did though so I still have some real estate left. I get them for me and I don’t really explain mine either. I’m just glad they are accepted now unlike when I got started and it was still a bit taboo.
Put a paper towel over the eggs in the container and it will wick the sauce over them. Then you won't need to rotate the eggs and not need as much liquid.

What a way to start answering a kinda broad set of questions and pulling it all together to give us great insight and a bigger picture of yourself. I was talking with my 10 year old son one night about why I watch certain RUclips channels and why I don’t care for others. I explained that I enjoy both Aaron’s channel and yours, because of the people that you are. You’re both real dudes that don’t try to be fake or something you’re not. Although the videos are just a snippet of life, you always act the same regardless of who you’re with and treat everyone with respect. I told him to do as I’ve done and surround himself with people like the two of you and life will be so much better!
That really does make me happy. Like I said, in the video, one of the things that drew me to Aarron as a friend was the way that he regarded Fishing and the way he treated me as a human that he didn’t know when you start weeding out some of the bad people you definitely end up with less friends, but better ones.

Thank you for sharing your life in a nutshell. My friend and I talked about opening a restaurant many years ago but it's grueling work and I wasn't able to commit 100% of myself at the time. It's also a risky business. That's an awesome story of how you met Aaron to 7 years later marrying him and Madeliene. What an honor that must have been. Funny how things work out.
I loved the part about paying your dues. As a new ER nurse in the 90s, I had a charge nurse that was brutal. She made the “new guy’s” life miserable. But once I proved myself and showed I belonged there, she would move on to the next new guy. I think we do need to have some of that return. It makes a person tough and not so easily offended. Too many younger people don’t get that the world is a hard place and people aren’t going to give you your way just because.
Aloha Will. This hit so close to home, as well as Aaron’s decision. I got out of the industry at 55. Always front of the house. Tried to do guided fishing in between. Ditched that as well. It literally sucked the life out of me, and cost me my passion for food, wine, fishing, and especially people. Unless you’re in the industry, I honestly don’t think people comprehend what you deal with on a day to day basis. There is a reason why industry people abuse substances, whether it’s alcohol, weed, or worse, just to wind down. I know it can be good money, because I’ve made it, but is it worth it? Not to me.
You just hit a really good point. At the end of your workday you’re so spent and it’s usually so late. The only thing open is a Bar so you sit and drink your day away. It’s a very difficult lifestyle to balance. I commend the people who are able to do so.
Will, thank you for sharing your life story with us. I've always wondered if you had a background on cooking because of all the delicious food you prepare on your channel. Now I know. I live in Brooklyn and will definitely visit your restaurant.
@@CookingWithClams I think what people don’t realize is you can be the best chef and still fail because the business aspects aren’t there. Managing costs and managing people aren’t easy. I see a bunch of crappy fried seafood restaurants that are doing well because they figure out their costs. There is a restaurant in famous for their shrimp “local” but I see their suppliers drop off boxed frozen FARMED shrimp!!

What's the difference between regular white rice and sushi rice?
The grain itself and the starch level. Sushi rice is a bit sweeter in taste and stickier due to the starch content

WOW!, Well said! When I saw the title, I definitely wanted to know why you wouldn't cook in a restaurant again. What a way to start answering a kinda broad set of questions and pulling it all together to give us great insight and a bigger picture of yourself. It seems that you fed us the information in a similar way to how you cook up a dish. It was well organized, well explained, and revealed enough information as not to make this a 8 hour video but we could walk away feeling that we know almost everything about how and why you're where you're at today. Lots of information in a short period of time, that gave us the big picture. Thank you!

I was talking with my 10 year old son one night about why I watch certain RUclips channels and why I don’t care for others. I explained that I enjoy both Aaron’s channel and yours, because of the people that you are. You’re both real dudes that don’t try to be fake or something you’re not. Although the videos are just a snippet of life, you always act the same regardless of who you’re with and treat everyone with respect. I told him to do as I’ve done and surround himself with people like the two of you and life will be so much better!
That really does make me happy. Like I said, in the video, one of the things that drew me to Aarron as a friend was the way that he regarded Fishing and the way he treated me as a human that he didn’t know when you start weeding out some of the bad people you definitely end up with less friends, but better ones.

Thank you for sharing your life in a nutshell. My friend and I talked about opening a restaurant many years ago but it's grueling work and I wasn't able to commit 100% of myself at the time. It's also a risky business. That's an awesome story of how you met Aaron to 7 years later marrying him and Madeliene. What an honor that must have been. Funny how things work out.

I loved the part about paying your dues. As a new ER nurse in the 90s, I had a charge nurse that was brutal. She made the “new guy’s” life miserable. But once I proved myself and showed I belonged there, she would move on to the next new guy. I think we do need to have some of that return. It makes a person tough and not so easily offended. Too many younger people don’t get that the world is a hard place and people aren’t going to give you your way just because.
Well said. Although it was tough and at times humiliating I am still so thankful for it

Aloha Will. This hit so close to home, as well as Aaron’s decision. I got out of the industry at 55. Always front of the house. Tried to do guided fishing in between. Ditched that as well. It literally sucked the life out of me, and cost me my passion for food, wine, fishing, and especially people. Unless you’re in the industry, I honestly don’t think people comprehend what you deal with on a day to day basis. There is a reason why industry people abuse substances, whether it’s alcohol, weed, or worse, just to wind down. I know it can be good money, because I’ve made it, but is it worth it? Not to me.
You just hit a really good point. At the end of your workday you’re so spent and it’s usually so late. The only thing open is a Bar so you sit and drink your day away. It’s a very difficult lifestyle to balance. I commend the people who are able to do so.
Will, thank you for sharing your life story with us. I've always wondered if you had a background on cooking because of all the delicious food you prepare on your channel. Now I know. I live in Brooklyn and will definitely visit your restaurant.

Great video, definitely answered questions I had. I read that 7 out of 10 restaurants fail. It is a tough business.
It can be a nightmare. And it really does take putting in 110% of yourself into the business to make it succeed.
@@CookingWithClams I think what people don’t realize is you can be the best chef and still fail because the business aspects aren’t there. Managing costs and managing people aren’t easy. I see a bunch of crappy fried seafood restaurants that are doing well because they figure out their costs. There is a restaurant in famous for their shrimp “local” but I see their suppliers drop off boxed frozen FARMED shrimp!!
