    Hey Will this what I mean by a lemon fish - its kiwi slang for a small shark. Rig, also known as 'lemon fish' and spotted dogfish, are small sharks found in coastal waters all around New Zealand. They are bronze or grey above, with a white belly and small white spots on their upper body and along the lateral line.25 Sept 2023 , Firm, white fillets that do not flake easily. Really popular with fish and chip shops as it's a good value fillet and holds together well when fried. Also known as Rig or Spotted Dogfish. Perhaps this is not the lemon fish you referred to on your night fishing adventure, however eating small sharks is ok with me but perhaps not for some of your green viewers.

    What a great breakfast sandwich. For something fun to do in December January in Key West the blackfin tuna school up and chase ballyhoo in the shallow reef at Western Dry Rocks. We used lures because we were tournament fishing and you got more credit for using artificial. Live ballyhoo cast on a spinning outfit will work great. My best was 30.5 on 15# bait casting tackle. Every now and then a big black grouper would smash out lure and it was game over.

    Something to try.
    Pan-seared fish (white fish like cod is my preference), salted boiled baby potatoes, sauteed mushrooms and sweet onions.
    Very simple but an amazing way to start the day; the baby potatoes are great with the fish, but the sweet onion and mushrooms cooked in butter adds just enough moisture and sweetness to tie it all together. This is my alternative to the traditional american breakfast (I dont like US breakfast foods; they're heavy and make me want to puke/leave me lethargic for the next few hours. This however, chased with some ice cold water, is perfect to start my day on a pleasant note. I can't eat it every day, but the days I do I'm glad for)

    Hey Will here's a challenge. Lemon fish. Where I live they are a plentiful species of small shark. We eat the smaller ones and the trick is to ikejima them asap and gut them asap or else they develop an iodine type flavour in the meat. A vinegar wash helps remove that iodine thing if u are a bit slow dealing with them. Good fried in crumbs or batter or as a stew . If this is the same fish at your place would you try to make a dish from lemon fish? A use the unpopular challenge.

      @@CookingWithClams - I made this tonight with some black rockfish I caught this summer. It was amazing, my picky kids loved it too. You really should put together a “off-cuts of clams” recipe book. 😂
      Rockfish is light, white flesh, flakey, slightly sweet. I haven’t had a lot of snapper, but the fillets look very similar!

    Ok my interest is peaked with the fish sausage.. I make about 300lbs of smoked deer and pork sausage of all varieties every yr. Iam down to try this.

    Will, this one is a winner for sure!! Wow. Im excited to try this recipe asap. Im going fishing tomorrow morning first thing and hopefully ill get a few decent speckled trout. I think they would work well for this too.
    Have you ever thought about making a cookbook with some of your unique recipes? I know i would absolutely be one to buy it and try them all. And id bet many of your subscribwrs would feel the same way. "using the whole fish" would be a good title. Haha

    The paste + the chunks is an interesting move. I’ve gotten in to sausage making and wanted to do a smoked fish dip sausage. Do you think the paste + chunks move would work in a casing too? Great job, thanks will!

    Whoa! You had me at bacon, but sausage too?! You spoil us Will, you really do! Serious question, if you made this...could you put them in a food saver type situation and freeze them? And when would you freeze them, before or after cooking? I'm asking because I feel like this could become a real thing in our freezer. Amazing!       So funny enough I froze one after cooking and heated it in a pan with a little water covered, to steam it and it was pretty darn close to the initial cook

      I go to Saratoga every summer, may have to take the train down. I now save the rack after fileting fish thanks to you. Can't believe I've missed out on 30 years of grilled fish tacos from every rack discarded.
