I love Keith and his knowledge and skills with Indian cuisine. But personally I like lesser mashed potato filling in my dosa and a less amount of spices in the mashed potato so that it looks yellowish not dark brown.

Place by my way, Dosa Hutt in Queens, NY by the temple. Old family friends of ours. Go on a weekend when you come down to NYC again. My favorite is the ghee cheese masala dosa. Onion rava (wheat) is excellent too. I usually get both by skipping the masala on one. Too heavy, otherwise.

There are 2 types of Dosa....thin one n thick one....thin one just crispy n thick is crispy on one side n soft on other side...on the soft side we put aalu masala n fold it

naaaah! thats not the way to eat dosa..but thats ok..but ok, you did it right the second time..it will be served along with chutneys..red one; white one.. and with sambar...each peace of dosa with each different dip...you will see heaven..in each! this is the staple breakfast in South India...within dosa you will get at least 10 different types of dosas..like, masala dosa (that you ate now); kaaram dosa; onion dosa; egg dosa...etc
