Made this cake. When Josh emphasizes moist, he’s not kidding. Grating the carrots definitely boosts the moisture here, so spongy. Cake is also quite heavy. One slice puts you out for sure. The only reason this is upsetting is the richness and variety of flavors here just makes you want to eat more. Absolutely delicious.
My daughter (an excellent cook) is turning 17 and asked me (a less excellent cook) to make her birthday cake because she was too busy. She was pretty worried until I told her I was using a Joshua Weissman recipe, then she relaxed. I just finished it and it came out perfect! (BTW the other menu item for dinner is Chicken and Waffles from you-know-who!). We both love your videos. I've recently made Korean fried chicken and no-smoker ribs, and they were fantastic! Keep it up.
This doesn’t even really need a whisk which in the spectrum of cake makes it very low effort. The spectrum of cake does start pretty close to the fiddly end of things you can do though.

I just made this yesterday and replaced the flour with gluten free flour and almond flour bc my dad sadly has a gluten intolerance and I can’t believe how good it tastes! Super moist and you can’t even tell it’s gluten free🙌🏼 easily one of the best cakes I’ve ever made
I made this cake and it was so good! I did add 2x the ginger and nutmeg. I should have let the cake cook longer. The cake is super moist so the walnuts give it some crunchy- crunchy and texture.
Small tweaks I'd make to the recipe: TIP 1: When making the batter, I didn't need to add any excess milk. The cake batter will be somewhat tight, but once you add the carrots and mix it up, the excess water will loosen it up perfectly. ( At least this was my experience, results may vary due to absorption rates as Joshua said ) TIP 2: I would do either 3/4 cup of walnuts/pecans OR 1/2 cup of walnuts/pecans INSTEAD OF original 1 cup of walnuts/pecans. Nutty flavour is slightly overpowering the carrots. If you like it like that though, do the entire 1 cup. If you want it they way I prefer ( more balanced), go for the 3/4 cup. If you want it more carrot-y, do the 1/2 cup. TIP 3: For the frosting, I'd do 1/4 cup of heavy cream INSTEAD OF original 3/4 cup of heavy cream. I tried 1/2 cup of heavy cream, and even that was too watery IMO. ( Sour cream texture I guess?) TIP 4: To make dark brown sugar, I added 1/2 light brown sugar and blitz it in the food processor to get it loose, then poured in 1/2 tbsp of molasses and blitz until evenly distributed. Another way is the same process but add 1/2 cup granulated sugar, don't need to blitz, then add 1/8th cup molasses, and then blitz. Boom! Dark brown sugar! TIP 5: If you're making this entire recipe into 1 large cake instead of 2, it'll have to go for at least 50 minutes for those doing it that way. By the time the cake is cooked through, the edges will be crispy though, so for the absolute best results, do what Joshua did in the video. TIP 6: If you're using salted butter for the caramel sauce, I'd do 1/2 a tsp instead of 1 tsp of kosher salt. Also, wait for the sauce to cool for the best result. Mine turned out great - great flavour and small punches of saltiness. The cake was very moist and delicious, frosting was great, and caramel was B-O-M-B. Good recipe
Related to tip5: If I want to make half of this cake, so just 1 layer but same size he does would it be as easy as just splitting all ingredients to half or would that mess it up?
Looks so good, I want to try doing it sometime!! Here in Brazil we do carrot cake without the aromatics, and the carrot would go into a blender, so the batter becomes yellow. And in the top we usually put some brigadeiro, a kind of chocolate sauce... it is made with cocoa powder, butter and sweet condensed milk... you should give it a try too!
This is by far the BEST carrot cake I have ever eaten! I have always felt that carrot cakes are too overly spiced when buying a piece at a restaurant or bakery, but your recipe blends all the ingredients into a perfect tasting cake. I tried this recipe this morning and everything went well-I reduced granulated sugar to 50g, no light brown sugar at all, and added the same amount of brown sugar. For the frosting, I didn’t use a lot powder sugar. In other words, I didn’t use the suggested amount of sugar! And everything tastes good! We don’t need that much sugar, when we can adjust the recipe...but I do like Josh’s videos

The ONLY time I ever bought a cake from a store and didn't hate it outright was from Trader Joe's, and even they are 1/2 for the record. Cakes are just one of those specialized goods that really need to be bought at a professional bakery, not a grocery store. (As a side note, Paris Baguette cakes are pretty bad, too.)

I made this cake yesterday. I didn't have any heavy cream so I used a dollop of sour cream in the icing. I also used regular dark raisins. It was great.
Love carrot cake thou I'll omit from the nuts as I have allergies. Also tip I use in making a tiered rainbow carrot cake is to use rainbow carrots separated by color in separate 1 inch cake pans. Also as I dont like wasting the rounds I find crumbling them on the buttercream icing a good substitute for the nuts visually.

I made this and it turned out great! Would definitely recommend the carmal sauce, Pro tip If you've never made it before once you throw your ingredients into the sauce pan the sugar will eventually harden and you won't be able to whisk it anymore (without everything being caught in the whisk). So grab a rubber spatula and just make sure it doesn't burn. After this it'll eventually melt again and start browning like you want it to

Agreed. I reduced the sugar from 430g to 300g and it was still a sugar bomb. If it's still good at 100g I'm doing that next time.
Just an idea, if you do make this. When you cut the cake to make it flat, don't throw it away. Make cake pops with the left over icing.

Love carrot cake thou I'll omit from the nuts as I have allergies. Also tip I use in making a tiered rainbow carrot cake is to use rainbow carrots separated by color in separate 1 inch cake pans. Also as I dont like wasting the rounds I find crumbling them on the buttercream icing a good substitute for the nuts visually.

Our carrot cake is so much better.
This one is just a spiced cake with some carrot shavings in it and a bland looking frosting.
Ours is prettier and tastier. And it's even better when you but like zest or orange juice in the batter. So good!!
The real stuff! And we eat it with chocolate ganache what makes the cake even better

I made this and it turned out great! Would definitely recommend the carmal sauce, Pro tip If you've never made it before once you throw your ingredients into the sauce pan the sugar will eventually harden and you won't be able to whisk it anymore (without everything being caught in the whisk). So grab a rubber spatula and just make sure it doesn't burn. After this it'll eventually melt again and start browning like you want it to
