For me, I would probably blitz up the puffs so it's a crumble/powder, that would help with the texture balance! Also, I love adding cinnamon and sometimes a zest into the glaze! Cinnamon is so good. Add it to vanilla ice cream and it takes it to another level

Believe in yourself, prepare your ingredients and go slow. You can learn it with what he uploads already. Start with his pasta video(s) those are the simplest. Especially the tomato sauce (tomatos, onion, butter) in the 3 sauce video iirc. Then cook what you find interesting and build confidence.

Hey Josh, for recipes with huge amounts of oil needed like this, what do you do with the oil once you're finished? My dad sometimes puts it back in a big jug after it's cooled and uses it again if there's not much in there, but if you know anything better that'd be super helpful!
As long as you let it cool with a lid on it and strain it well, that should be fine; bacteria need water (driven out by the high heat and kept out by keeping the oil sealed), food (removed by straining, and warmth (too much kills them). Also, don't let the oil get too hot; otherwise it gets *nasty.*

If you like coffee use some warm fresh coffee instead of water for the glaze. Delicious.
