This is How You Make Homemade Cool Ranch Doritos With Queso Dip

  • The guys at Food Steez know a thing or two about how to re-create your favorite junk foods. Here, they’ve pretty much outdone themselves with their homemade cool ranch Doritos and queso dip recipe.
    Cool Ranch Doritos
    • 1 package uncooked small corn tortillas
    • 2 (1 ounce) packets dry ranch seasoning
    • 1 tbsp. smoked paprika
    • 2 tsp. ground garlic
    • 2 tsp. ground onion
    • 2 tsp. salt
    • Peanut oil or canola oil for frying
    Homemade Queso:
    • 2 tbsp. butter
    • 2 tbsp. flour
    • 1 cup whole milk
    • ¼ tsp. salt
    • 1/8 tsp. cayenne pepper
    • 8 ounces sharp cheddar cheese, grated from the block
    For the queso, melt the butter in a medium size skillet over medium heat. Once the butter is melted add the flour. Whisk until it combines into a smooth blond paste and starts to bubble around the edges. Add the milk to the skillet and continue whisking. Once the milk is incorporated, raise the heat to high and bring to a boil. Once the milk has reached a boil, quickly lower the heat and reduce to a simmer. Allow the sauce to thicken slightly. Add the cayenne pepper and salt and whisk to combine. Add the cheese and gently stir, allowing the cheese to melt. When the cheese is completely melted and the mixture smooth in consistency it is ready.
    For the doritos, heat 2-3 inches of oil in a large pot at 350F. Cut the uncooked tortillas into triangle wedges (like pizza slices). In a medium bowl, mix together the ranch seasoning, paprika, garlic, onion, and salt. Working in batches, fry the tortillas until crispy (about 3 minutes per batch). The tortillas may tend to puff up while frying, so be sure to press down on them to avoid this. Place the fried tortillas on a paper towel lined plate to drain some of the excess oil. Immediately after, place in mixing bowl and toss with seasoning. Dip in Queso Dip and enjoy!
