For the record, I've made vital wheat gluten "chicken" from a dozen or more different recipes and they've all been about the same; less than mediocre. So mediocre that I've kind of just stopped making them. I had never seen this method so I went all in. To a T, I followed your recipe including the teriyaki sauce and I have a few things to report. First, holy $***! I'm not one to mince words so here it is. This recipe is going to be a life changing experience. It's so versatile that I am confident I can fit it into any recipe calling for chicken. It's that good! Tonight I ended up eating 3 bowls until I felt I was able to perfect it to my taste. Straight from the cutting board to bite size pieces then back into the pan drizzled with sauce. It's chicken thighs....it really is ✊🏼

I'm vegan since ten years and in Italy we always use seitan like meat replacement. Let me tell you that this is the first time that I see another way to cook the seitan. Normally we put the dough in the boiling water and it's always like a sponge, so we use to buy it already made. Congrats for your channel, I love asian cuisine and I'm happy to have found you to see your vegan way to make them. 💜

I’m half Japanese and half Taiwanese. I’ve lived in many places including the US which is where I went vegan a few years ago and I live in japan currently. You’re gonna have to put up with the amount of garlic I put in my pasta😂😂
Ive learned a few things anout this... idk if its true or not but, ifyou cook wash too much of the starch or cook it for too long then itll become spongy
I made this today and my mind was totally blown. Trust me, I just never thought it would actually work. The way the protein came out from that flour dough and that spongy texture literally blew up my mind. I didn't have enough ingredients for seasoning and the gravy though. So I had to use the spices I had lol. This is totally worth it to make it! Thanks for the video! 😄

It smells quite interesting doesn’t it hahah. Yes I suppose it’s normal - mine did smell too and the smell will get even stronger the next day (but the texture will be better) It’s not the most pleasing smell but i guess it’s inevitable haha, at least you don’t “taste” it when you eat!
Washing the dough is a very laborious task but still i use wash the flour method. I also incorporate defatted soy flour, byproduct of soyabean oil extraction containing 52% protein by dry weight. Then i simmer these sticks and deep freeze for 24-48 hours. Wonderful delicacy! I dont think of it as meat substitute since I am vegetarian since birth. Its just another food that I have started liking after coming to New Delhi.
@@heathershook6059 Yes, it should be frozen in airtight container as a part of processing for atleast 24 hours. After simmering for 45 minutes take them out and quickly immerse in ice cold water. Initially they float on cold water but after 2-3 minutes they absorb some water and sink down. Let it be like that for few hours and then remove from water and freeze them. You can simmer them before frying. That way the texture is best. After frying you can put them in any kind of gravy to absorb flavour. Or you can make tandoori dishes just like chicken or lamb.
Hi , im from indonesia your recipe is so mouth watering . And i would like to share you another thing you can try . Seitan shredded chicken , you cand blend the washed gluten with the seasoning and spice in the food processor , then knead it for a while to reform the shape. After that you braided it then steam it for about 1-2 hours. Let it cool , then shredeed it manually and done . In this final result you can cooked it like you do with your teriyaki recipe or fried it to eat with some sauce

That's right, it's cruelty free! Yes you can of course make it with vital gluten flour. All you have to do is skip the whole washing process, and instead mix the wheat gluten flour with some water AND all the spices and seasoning at the same time, and knead it very well for like 10 minutes. The rest of the cooking should be the same!
Thanks for your video. I find seitan made with vital wheat gluten tends to come out very rubbery, chewy and I have digestive issues after I eat it. I remember visiting China years ago and eating the best gluten in dishes and have searching for the best way to make wheat meat.

OH MY GOD. Ok I grew up in a mostly vegetarian home, and so my mom often made all kinds of seitan so I have been asking it also for several decades. I also have been using your bacon recipe for awhile. But I finslly tried THIS specific seitan chicken recipe and......WHAT THE HECK IT'S SOOOOOO FREAKING PERFECT! and can use it for so many other dishes too since the seasoning is neutral!

Awesome video! Got me into making saitan myself. Just watched another RUclipsr, who kept the starchy water. Let it sit for 3 hours, seperated the water on top of the starch, salted the starch and made crepes out of it. Also can make the crepes recipe into vegan bacon strips. Just color one half the crepes mix with some soy sauce or magi. Put both colors crepe mix in stripes in the pan and then cut it into bacon shaped strips after cooking. Even if you tear the crepe you can crumble it for bacon bits!

Just found your channel and subscribed today😊 Going to be using this (with slightly less teriyaki possibly) to try making a meatless turkey this year. I’ve seen other recipes including your turkey one but the way this has a tasty skin on its own (without rice paper or tofu skin which I don’t have) and it’s so tender I think this is the one that will win the day. I’ve experimented with doing the wash and making seitan only twice before but I have a question: Can you start with gluten flour add seasonings etc knead it and get similar results? How much water would you have to add to get it to be as pliable if it can work? I never imagine that on Thanksgiving day you’d be available to answer this question but if you do you will save my dinner and make my holiday weekend🤗 Mahalo Jun!🫶🏽🤙🏽🍁🍂🥮

Hi, thank you so much for watching! I am just about to work on the website haha. i used 4 cups of bread flour for the portion size. The measurements for the spices are all up to you - I don't think you can go wrong with lots of smoked paprika/paprika and peppers. Just be careful not to make it salty! If your broth is salted, then you don't season the seitan dough with salt. I hope this helps, but let me know if you need anything else!

Hey there sorry for the late reply, thanks for asking! Yes, using vital wheat gluten skips everything before the boiling. When you knead it, make sure you do it with all the spices mixed into the dough already. Everything after it should be pretty much the same!

Just wondering what kind of flour did you use exactly? I know you mentioned you didn’t use all purpose but having some trouble figuring out what’s a good “strong flour” to use.
I am late, but perhaps this can help you: this is the flour used in pizza and bread. Just look for “strong flour”, “bread flour”, “pizza flour” or “00 flour” (known as “italian style flour”). These are made from hard wheat. Good luck.

If you seperate the starch from the water you can use it to make fake bacon or noodles. And then put the water on the plants.

That's right, it's cruelty free! Yes you can of course make it with vital gluten flour. All you have to do is skip the whole washing process, and instead mix the wheat gluten flour with some water AND all the spices and seasoning at the same time, and knead it very well for like 10 minutes. The rest of the cooking should be the same!

Thanks for your video. I find seitan made with vital wheat gluten tends to come out very rubbery, chewy and I have digestive issues after I eat it. I remember visiting China years ago and eating the best gluten in dishes and have searching for the best way to make wheat meat.

OH MY GOD. Ok I grew up in a mostly vegetarian home, and so my mom often made all kinds of seitan so I have been asking it also for several decades. I also have been using your bacon recipe for awhile. But I finslly tried THIS specific seitan chicken recipe and......WHAT THE HECK IT'S SOOOOOO FREAKING PERFECT! and can use it for so many other dishes too since the seasoning is neutral!

Just watched another RUclipsr, who kept the starchy water. Let it sit for 3 hours, seperated the water on top of the starch, salted the starch and made crepes out of it.
Thought I wanna share it, as I am a big fan of reducing wastage :D

Hey there, thank you so much! Yes, I just learned that you don't need to drain it and you can also make cold glass noodles with the starchy water. Crepes sounds amazing, I gotta check that out. I appreciate the info & your effort to reduce wastage!
Also can make the crepes recipe into vegan bacon strips. Just color one half the crepes mix with some soy sauce or magi. Put both colors crepe mix in stripes in the pan and then cut it into bacon shaped strips after cooking. Even if you tear the crepe you can crumble it for bacon bits!

Going to be using this (with slightly less teriyaki possibly) to try making a meatless turkey this year. I’ve seen other recipes including your turkey one but the way this has a tasty skin on its own (without rice paper or tofu skin which I don’t have) and it’s so tender I think this is the one that will win the day.
I’ve experimented with doing the wash and making seitan only twice before but I have a question:
Can you start with gluten flour add seasonings etc knead it and get similar results? How much water would you have to add to get it to be as pliable if it can work?
I never imagine that on Thanksgiving day you’d be available to answer this question but if you do you will save my dinner and make my holiday weekend🤗

Hi, thank you so much for watching! I am just about to work on the website haha. i used 4 cups of bread flour for the portion size. The measurements for the spices are all up to you - I don't think you can go wrong with lots of smoked paprika/paprika and peppers. Just be careful not to make it salty! If your broth is salted, then you don't season the seitan dough with salt. I hope this helps, but let me know if you need anything else!

Hey there sorry for the late reply, thanks for asking! Yes, using vital wheat gluten skips everything before the boiling. When you knead it, make sure you do it with all the spices mixed into the dough already. Everything after it should be pretty much the same!
Hi there! Literally going to try this today it looks so amazing. I’ve been vegan for almost 5 years now and have yet to try and make my own seitan so I’m a bit scared haha. Just wondering what kind of flour did you use exactly? I know you mentioned you didn’t use all purpose but having some trouble figuring out what’s a good “strong flour” to use.
I am late, but perhaps this can help you: this is the flour used in pizza and bread. Just look for “strong flour”, “bread flour”, “pizza flour” or “00 flour” (known as “italian style flour”). These are made from hard wheat. Good luck.
Looks great! But you don't need to throw out the cloudy water, I find that using the same water, just washing longer works just fine :)
