Speaking as someone went from never going near a frier to cooking chips (fries) all summer long for a theme park, I can verify that this is a common thing. You wouldn't put your fingers into the oil (some cooks can) but once the fry has been drained a little and you're checking for how well cooked/crispy it is, there's no better tool than your poor fingertips.
Broshmosh did you used to eat a lot of fries when you were cooking them all summer? Did you always feel tempted to grab a few each time they came out crisp and glistening?
oil is roughly around 350 degrees and as soon as you pull it out it cools down it really isn't that hot...

Pretty much all cooks develop "asbestos hands" from handling hot plates and pans all the time, so handling hot foods like that really doesn't hurt.

Coming back to this video after watching it years ago - the cheese sauce seems so ingeniously straight forward and simple, but I can remember when first watching it, the process seemed difficult to wrap my head around. It's really something to notice how much you've grown - in my case, due in no small part to videos like this one!

Also imagine prepping large quantities of fries and cheese sauce and storing them. The fries could last a while tightly covered and refrigerated, or flash fried and frozen (but frozen fries are often bleh if not done right) the sauce won't last as long but you can make a large batch and use it as a topping for burgers, dip for fries, pretzel bites, fried jalapenos, etc.

The pre-frying process is called “blanching” and is essentially how your favorite fast food chains can get you fries in just 3-5 minutes.

Pinching them tells you if they are blanched enough....if you pinch it and it doesn’t break, it’s blanched properly.....
Add the butter to the fudge sauce just before you are finished. This allows the sauce to look more glossier and shiny

Very interesting way to make a cheese sauce. I normally see a bechamel style cream sauce but this was done very differently. I'll have to try it since I find this process to be a lot more simple than the bechamel method and more cheesy looking. It also looks a lot more flavorful with the infused heated cream.

the only time i had shake shack was in 2015. i was visiting a friend and she recommended i go to the madison park one. i managed to squeeze in some time the day i was leaving to takeaway a burger and fries... can't remember what i got but long story short, i'm waiting at my boarding gate at JFK, eating my now cold burger.. and it was still amazing. a religious experience. haha
