In Finland we have a lactose-free version of every single dairy product. Kind of silly considering that the percentage of lactose intolerance here is smaller than in most countries.
Speaking as someone went from never going near a frier to cooking chips (fries) all summer long for a theme park, I can verify that this is a common thing. You wouldn't put your fingers into the oil (some cooks can) but once the fry has been drained a little and you're checking for how well cooked/crispy it is, there's no better tool than your poor fingertips.

I work in Manhattan and live in Flushing. Friday is my cheat day, so going to Penn and grabbing those cheese fries at the end of a long week always makes me happy.
Also imagine prepping large quantities of fries and cheese sauce and storing them. The fries could last a while tightly covered and refrigerated, or flash fried and frozen (but frozen fries are often bleh if not done right) the sauce won't last as long but you can make a large batch and use it as a topping for burgers, dip for fries, pretzel bites, fried jalapenos, etc.
I remember the first time I had shake shack it was a glorious moment, the juicy cheesey burger the caramel sweet chocolatey salt milkshake was truly glorious :')

Very interesting way to make a cheese sauce. I normally see a bechamel style cream sauce but this was done very differently. I'll have to try it since I find this process to be a lot more simple than the bechamel method and more cheesy looking. It also looks a lot more flavorful with the infused heated cream.
