How Danny Meyer Built Shake Shack

  • It's hard to think of a bigger restaurant success story over the last decade than Shake Shack. The high-end burger chain began as a hot dog cart in 2001 in New York City's Madison Square Park by famed restaurateur Danny Meyer. The menu was handwritten written by Meyer on a single sheet of paper in about 10 minutes and is about 85 percent the same today. But there’s so much more to this story. Like for three years after 9/11 that hot dog cart paid the bills at the crown jewel of Meyer’s restaurant empire, Eleven Madison Park. Or how he wasted over a million developing a line of French fries only to throw them away out of pure pride. If Danny Meyer is the heart and soul of Shake Shack, its longtime CEO Randy Garutti is the engine that powers it. Here’s how they built Shake Shack.

When I was in business school years ago, the only thing I remember any of the professors mention of value was "people think thin, but they eat fat" He was right. For many years, the big burger chain restaurants (McDonald's and others) have been trying to come up with more "healthy" and leaner versions of their meals. And all it did was make their food taste bad (especially their french fries). If I want to eat healthy I would NEVER go to a fast food chain restaurant. And when I am not looking to eat a healthy meal, but I want the food to taste as good as possible, I would go to a place like Shake Shack. Which is exactly what places like Shake Shack,Steak N Shake, In-N-Out Burger are captilizing on. Most of the other business professors just focused on text book learning, and also talking about past history in business, a lot of their 'advice' had no relevance to current/future business cycles.

I lived in NYC when Shake Shack was only in Madison Square Park, and my coworkers and I who were up on 36th and Broadway would check the live feed of the line (yes, Shake Shack lines were so long that they had a camera outside that showed live video of the line) and when it started to look like it was getting shorter, we'd race down there and line up for a burger. The shortest lines were 10-15 minutes long on a good day. One weekend they had a special burger (peanut butter and jelly burger) that we went out for and the line was 1.5hrs long. I miss those days hanging out with people in line and just chatting, although now that I'm in California I'm glad they're everywhere.

I didn't get the hype as the two burgers we tried were good quality beef but unseasoned meat. The chicken sandwich was underwhelming. *But then* I finally got around to trying the *ShakeStack* the meat has no season and I hate American cheese unless it's of quality yet that *Shroom with the cheeses, the toasted bun and fresh onions + pickles, well done* BUT GAWWWDD. I finally realized these folks can toast a bun and grilled some beef and this would be perfect for my mother's taste buds.
