    @GulfCoastSmoke thank you for the video. If you like to add seasoning towards the end, I have seen experts on here use a thumb grinder. It creates finer seasoning particles so there is less grit.

    Good video. Meat looked good. Soooo a few tips. #1 - I find using a Scimitar type knife really helps in trimming meat, especially trimming off the silver skin. The tip goes evenly under the thin membrane then easily removes the membrane without removing meat. Give it a try sometime, I believe you will like it. So number #2 - the tail of the loin. It's notably thin making it cook much faster then the rest of the loin. So use a chefs trick and double over some of the tail until it's as thick as the rest of the loin. This is so easy. Once done use some butchers twine and secure every couple of inches, it won't take many. Once tied up go ahead and season and cook. You did mention this is easy to cook on a weeknight, I agree. But remember you can do all your prep work the day before. Even setting up the kettle and chimney starter so when you get home you just light. Still checking out your video, have a great day.

    What type of lump charcoal? I have mesquite and it burns so hot. Never done pork on my grill before but want to try it out

    The degree of hot can be regulated by watering; more water, less hot. Less water, very hot.
