    Recipe Below
    Grilled Salmon Recipe
Coarse sea salt - or smoked sea salt
    Coarse black pepper
1 side of salmon or 4 - 6 (4 oz.) filets, fresh wild-caught is best
    3 tablespoons butter. melted
    1 clove garlic, minced
    3 tablespoons light brown sugar
1 tablespoon avocado oil (you can substitute olive, grapeseed, etc)
    1 teaspoon soy sauce
    1 teaspoon smoked paprika
    Juice from 1 lemon
Season both sides of the salmon with the sea salt and press in lightly. Season the tops (meat side) with the pepper. Let rest 10 minutes before grilling.
Meanwhile, in a small saucepan whisk together the butter, garlic, brown sugar and avocado oil. Cook over medium heat, until it begins to warm, stirring occasionally.
-Stir in the soy sauce, smoked paprika and lemon juice. Continue cooking until it reaches a low bowl, stirring occasionally. Remove from heat.
-Be sure you have a hot, clean and well-oiled grill. Place the salmon, meat side down, on the grill. Shut the lid and grill for about 2 to 2 ½ minutes (for under an inch-thick filet) or until the skin just begins to turn white around the edges. Flip over.
-Grill an additional 1 ½ to 2 minutes, with the lid open.
-Baste with the sauce and shut the lid for about 30 seconds. Remove from the grill and let rest a few minutes. Baste again before serving, if desired. Serve warm.

I like the way that salmon look and cooked on the grill. I like that setup you put together with the pallets and is considering building something like that myself since I live in the country where we can build almost anything we want. I know where I can get the pallets and the rest of the parts should not be over $10.00 dollars at Wal-Mart. I love that dog so much and how cute he is. I hope that God will continue to Bless you all.

Here in the Pac NW we use alder wood for smoke, a tradition that for thousands of years the native peoples found in abundant supply and used to smoke and thus preserve their salmon harvests since refrigeration was in short supply. The flavor is subtle but definitely enhances the delicate flavor of good fresh salmon. I love mesquite on red meats and chicken, but you cannot beat alder for smoking and grilling salmon...I guar-on-tee.

I cooked this recipe last night on my Big Green Egg, exactly as Kent instructed in this video. It was excellent! This basting sauce is so good that my son was dipping his finger into the pot for another taste after we had finished the meal. This is now the go-to recipe for grilled salmon in this house. The same thing happened with his rib recipe. We adopted that one too. The way he cooks is right up my alley and his cookbook; well that little rascal has a lot of good fixin's in it for sure it do (oops, I'm even beginning to talk like him!).

With my mixed California and Alabama living I pronounce it "sammin". Out here in Santa Cruz, California we get fresh salmon (sammin...) running every year and the sport season is a major event. You head out of the harbor at first crack of light when you can tell the difference between the red and green harbor buoys and head to your favorite good luck spot. Hopefully the sonar fish-finder says you're on top of the school. By noon you have your boat limit and by early evening you're back in your slip with the gear cleaned and some fresh fresh fresh filets or chops on the onboard grill. I like to poach them in lemon and orange juice on a sheet of tin foil with chunks of butter and mango on top all wrapped up. It's so sweet and delicious! Have a chilled bottle of local chardonnay or grenache (pink) and some asparagus with it and you have one beautiful satisfying boat party day. It's also common to stop closer to shore and pull up a 20 pound halibut or two to supplement the meal. We live next to a fantastic natural pantry in the Monterey Bay!

Most everyone here in Alaska owns a vacuum sealer. I do suicide runs - meaning start fishing in the evening and catch your limit. At midnight, your limit resets and you can fish again. It is daylight nearly 24 hours in the summer. All the fish I catch stay on a stringer in the cold river. When done fishing, filet em on the bank, throw on ice, and take em home.
Cut em into serving size pieces at home and vacuum seal. They freeze perfectly for a year or even more. Rinse and repeat every summer.
Once I have just about a years worth in my freezer, I fish right out of the river 5 minutes from my house. If I get a good salmon, bring it right home a few minutes later and throw it on the grill. There are lots of salmon you can catch right in the city limits in Anchorage. 😃

Kunife? Maybe Kinifee. I don't actually agree with Kent that salmon is pronounced with the l though. No one I've ever heard speak says it that way.

@@827Drew actually everywhere in the world they pronounce it with the L ask a Mexican they will pronounce the L even Russians pronounce the L

@@captain_clutch4983 Well, I used to have a Mexican girlfriend, and she most definitely did not pronounce it with the L if she was speaking English. Her parents did but they didn't speak much English, and they would pronounce it 'salmón'. Which is definitely not the way you say it in English, and can be attributed to an accent.
I mean, the way all these non English speaking countries pronounce English words is nice and all, but do you want to know how people in the U.K. (AKA where literal English people live) pronounce salmon? Without the L. The phonetic spelling is in every single dictionary, and there is no L in sight.

Latin had "salmo" but the French lost the L in the middle ages, so English loaned it as "saumon".
Then later English scholars started comparing to Latin and inserting stuff that had been gone for centuries already back in, so they got silent letters:
      salmon->saumon>salmon
      debita>dette>debt
      recipit>receite>receipt

If you say the L in salmon then you have to say the T in fillet. Really church it up.

My mom started me cooking when I was 4 Bless her Bama heart..I have been cooking since then. Some have called me chef, pit master, and “cooker upper”. Love to cook, any how, any way. That said, I bought your book. Loving every line. The stories are great, but the recipes are the gem. Mom is gone now resting in Jesus arms. You have reminded me of so many things she taught me, but I have forgotten. Thank Kent, give Shannon a huge hug, and when she returns it, that may be my Mom, letting you know that we are all loved.
