I had an uncle that tok me crabbng when I was about 12. I loved it, Very similar traps off of a dock, We caught lots and I still remember it 65 years later. YUM! Love how they are helping each other.
Leg quarters are definitely the way to go for bait. At the camp my dad used to have we would buy a 10lb bag of leg quarters and use the legs for bait and cook the thighs. Enjoy watching kids out there having fun too!
We went a few days before y'all and we caught 3 dozen really nice crabs. We had trouble because we kept losing the bait. I think we were trying to run too many nets. Also, that water is pretty deep close to the wall. We ended up losing a few nets that went under. We had 15 ft lines.
I cut my lines at 22 feet to account for the knot at the cork and at the net. But still, in swift current, I won't put them any deeper than about 16 feet.
Your deckhand is not afraid to grab a catfish. I grab them by hand most of the time, but I am aware of how bad it can be if it sticks a hand or finger.

I boil them 15 minutes and let them sit 15 minutes and they have never been mushy
