Right on Jack, Blackfish is the best.. I had a liquor store the next town over from you and this guy would bring me some every week when they were in season..I would cut then in chunks and roll them in corn meal and fry them..then make fish tacos.

Just curious: why not make the stock out of the rack and head? It's a blackfish chowder after all...and tog bones are full of gelatin!

black bass as in black seabass? if so no they are not the same fish. (blackfish,white chin,tautog) are all the same fish.
If you mean same type as "can you you make a chowder with it"? then yes, it's a VERY good eating fish with white flaky meat.

The tautog is discouraged from selling because it is not a sustainable specie.
I fish in rhode island and they are like rats. They are everywhere. I stopped shooting them because my freezer is so full of it.
