    Pollo Asado recipe:
    3lbs of boneless chicken thighs
    4 California chili pods
    4 Guajillo Chili pods
    1/2 onion
    4 garlic cloves or 2 large cloves
    1 orange
    1 lime
    1 tsp oregano
    1/2 tsp cumin
    2 tsp salt or to taste, but the marinade needs to be a little saltier, the meat doesn’t absorb all the sodium. So season slightly heavy.
    2/3 cup white vinegar

    I'm from Australia and here we have this popular brand called Old El Paso and they make seasonings and stuff for tacos but maaaaan, I gave this a crack, I couldn't find the same chilis here that you used so I ended up using just regular red chilis and it came out really great. I love Mexican food... Awesome video!

    I made this recipe and my family loved it. For the Superbowl I am doing a twist. marinating my chicken wings in this marinade. I am using salsa veranda with avocado for the dipping sauce. Thank you for the video

    I’ve been trying to figure out how to make chicken like this.. I moved from AZ to NY and the Mexican food here is appalling... my husband and I used to live down the street from this market back in az and they made the best smoked chicken.. I cannot wait to make this! Thank you!

      I hope you and your hubby enjoy it Keri, this is my go to recipe if I have time to make it. The key to this marinade is to let it sit. I would let it sit for 48 hours before I would serve a batch in my old lunch delivery. Let me know what you think of it. Thank you.

    Kirby I accidentally tripped on this video of yours, we tried the recipe and thought it was fantastic, we don't have a charcoal BBQ, so to get the Mesquite and Apple-wood smoke flavors we added 1 tsp of Mesquite and Apple wood liquid smoke, my wife cooked it in the air-fryer, 6 minutes a side at 375 - 400, the fajitas were absolutely delicious, just wanted to say thanks for taking the time shooting the video and posting up the recipe, we are fans, thanks again from Canada!!!

    I just made this today for a small party at the house and it was a huge hit. Everyone asked for the recipe. I did 3lbs and did end up adding more salt while on the grill after a taster. You were right… more salt than you think you’ll need. Thx for sharing!

    Thanks for this video! I made this yesterday, and it was great. I used the juice of three sour oranges (instead of the orange and lime), and added a bit of honey to replace the sweetness from the orange. I didn't have access to a grill, so I roasted it in the oven at 425°F for about 25 minutes, then broiled the top for a few minutes until browned. The chicken did release a lot of moisture while cooking, so I drained that out of the pan halfway through the cook time. It made great tacos yesterday, and a great breakfast today.

    Looks amazing. I’d do indirect until about 175, and keep it off direct flame. But to each there own. Slow and sear for the win.

      Thats a good surprise, you cant beat pollo asado tacos. Be sure to let it marinate over night. I let mine sit for 48 hrs before grilling it.

    Seeds do not have any heat. It's the placenta (membrane) that holds them that has the spice. I really wish people would learn this.
    But thank you for the recipe. It looks great. I will try it soon.

    Another thing you can do is shred the cabbage add cilantro and white onion and lime juice to wilt the cabbage a little but still crunchy that turns out really good

    Hey brother. Awesome video. Quick question, my wife does not like spicy food, so with the chili pods I know you take the seeds out but will that still have the chicken with some heat to it or is there another alternative. Again we appreciate your help.

      Hey Patrick, this marinade is not spicy. The Guajillo or California chili pods are low on spice level. I use them for flavor and color.

    Hey, I'm really wanting to try this recipe but worried about the amount of acid/citrus. Would it not slightly cook the outside of the chicken? I marinated chicken for 2 days in a lemon marinade and the outside was white as it had slightly cooked. Thanks!

    3:55 - Marinating chicken over 12 hours, even for a whole chicken is not helping but damaging the meat, this is only true when using acids like vinegar or lime/lemon juice. The acids breakdowns the protein and actually cooks the meat in its raw state.

      On a serious note though, just add more salt to make the flavors pop. That is just the recipe we used to use when I sold tacos. Less sodium, longer marinade times. We would usually prepare the meat a day before. But if you have a 4 hr window, just add more salt to taste.

    This is a great recipe! I love making this now. I will say that reverse sear doesn’t mean indirect cooking. It means searing in high heat AFTER you cook on lower temperature instead of BEFOREHAND.

      yes, the salsa is just a base Adobo salsa. I've used it on pork, and seafood

    Hey dude! Great video! What pepper would you recommend substituting for California Pods or the Other one? I’m in the countryside of Michigan from San Clemente CA, they don’t have many of those dried pepper options. What would you recommend to substitute for any of the dried pepper pods?       Hey Jeremiah, I would order them online if you cant find it locally. I do notice the farther you get away from the south western region, it gets harder to find certain spices. If you got any latin stores locally, I would try that route. California and Guajillo peppers are not too spicy. I have used San Antonio chili's, seems similar to California in taste and heat. New Mexico peppers are hot, well the ones I get anyway. Also try looking for hatch chili pods. Those can range from mild to hot. You can use spicy chili pods, I personally make the marinade flavorful and let who is eating it put salsa on it to their liking. Let me know if you cant find some, if you cant, email me and ill send you some.

      No I didnt do anything than what I showed in the video. I just let it marinate for a bit. I like to let it sit over night, you will notice the flavor difference when you do.

    Gonna try this for sure... I live in SoCal and walk by those dried chilies 🌶 all the time. Now I’m gonna grab a few bags and give it a go. Have you tried this using Arbol chilis?

      I've used chile de arbol on some marinades. Those usually bring the spice, depends how hot you want it to be.

    What if i dont have the red chiles? Is there a substitute pepper like green i can use or sauce or whats another version?

      You can, you dont have to use red chilis. Ive made it with habaneros before. that made it spicy, but good. I can see maybe a mix of poblano and serranos being a good substitute. To make it red, you can also use tomato or tomato sauce.

      Let it marinade, I like to let it sit at least 24 hours. This is my go to recipe, I have different versions of this. Another one I add habanero to it. But its the same recipe with Habanero in it. Let me know what you think of it. Thank you Tanker, and be safe.

      Yes you can, I make another version that I use Habanero instead of dried chilis.
