Potato Tuna Patties Recipe

  • Potato Tuna Patties can be served either for breakfast, lunch or dinner alongside a fresh salad and your favorite dipping sauce, either as appetizer. They keep well refrigerated and can be used for the next day meal, either warm or cold. Tuna in combination with mashed potato, corn, lemon and green onion seems to be a winner for our family and I am certain it will be for you too. Just give them a try.
    Ingredients
    Makes about 12 patties
    10 oz (300 g) potatoes, boiled with their skin on and chilled
    1 can (7 oz- 185g) tuna in oil, drained, flaked
    1/2 cup corn kernels
    2 spring onions, chopped
    1 egg
    lemon zest from 1 lemon
    1/2 cup breadcrumbs
    Salt and freshly ground black pepper
    2 tbsp olive oil
    1/2 cup breadcrumbs, for coating
    Directions
    1. Mash the potatoes using a potato masher.
    2. Add the tuna flakes and mix with a fork.
    3. Add corn kernels, chopped spring onions, egg and breadcrumbs.
    4. Finally add lemon zest and season with salt and pepper. Stir well to combine.
    5. Divide mixture into 12 portions. Shape them into patties. Place breadcrumbs on a plate and add the patties to coat.
    6. Heat oil over medium high heat in a nonstick pan. Cook patties for about 3 minutes on each side until golden brown. Transfer the patties to a plate lined with paper towel to remove excess oil. Clean the pan with a paper towel and repeat until all patties are done.
    7. Serve with your favorite salad, and sauce. We served it with our homemade chilli jam.

    I just made this, but I didn't have spring onion and sweetcorn, so I used 1 white onion, 1/2 cup of spinach, and 1/4 cup wild rocket, and half a scotch bonnet pepper (no seeds). I also added some Garlic salt and chilli flakes, it tasted soooooo good! Especially with the lemon zest! YUM

    Loved your recipe. Went to make it and didn't have tuna but had canned salmon. I added 1 tsp oil per about every 3 oz salmon. Turned out great! I didn't have your chili recipe for dipping, but had sciracha. I added a little mayo to the sciracha - turned out great! That's another thing I like about your recipes: they are adaptable.

    Yum, what I like about your cooking is. Most items I have in the kitchen. No crazy herbs. Love the instructions at the bottom. my grandkids can watch and read while we make them. Eleven grkids and they eat nonstop. A vat of biscuits and gravy or a gallon of milk w a box of cornflakes breakfast. Blessed day to all !

    Made these tonight. Used onion instead of spring onion because that's what I had on hand. Delicious. The corn really makes these great. I also used tuna in water because that's all I had.

    Add fresh green peas, fresh coriander leaves, roasted cumin seeds, green chilli, cheese and fenugreek dried leaves. It taste awesomely delicious.

    Thank you so much for this recipe I tweaked it a little as it was to bland for our pallette so I added a finely chopped green chilli and some lime juice as lemons are not available where I live they were simply gorgeous my family loved it😊

    Another gem! I coincidently had left over baked potatoes and tuna, so I decided to try this recipe. What a great idea! That lemon zest gives it such a Spring kick! Thanks for sharing!

    We have similar traditional recipe in Indonesia, complete with the corn and all, but we don't usually use tuna, sometimes we use shrimps. It's called perkedel here. :D

    My mother used to make tuna fish patties all the time, mostly for lunch. Slightly different recipe, though. Much simpler. She used cold leftover mashed potatoes from the night before, mixed in drained flaked tuna. formed the patties, dipped them in a beaten egg, coated with with crush saltines and fried them. Skipped the other stuff in this video.

    is there a reason you keep the potatoes whole with the skin on to cook them? why not peel and quarter them to boil them until soft enough to mash if mashed will be the consistency in the end? seems to me the boiling time would be massively reduced by peeling & quartering, but... I could be missing something. I'm no chef, so...

    Are the corn kernels boiled? Or, raw? I don't want to use the canned corn here. I want to buy the fresh raw once from market. So, would you please let me know how to add those in here?

    my mom these all the time and we called them mashed tater tuna cakes. she never put corn in them but finely chopped celery.

    I tried your recipe this morning but they didn't turn out the same way with yours. They tasted like a plain mashed potatoes hehe. While frying, they also turned out to be absorbing more oil to be cooked, end result... they are still soft and mashy inside hehe

    I'm allergic to corn, but the corn seems like a very weird addition to these anyway. I might substitute a combo of minced celery and minced red bell pepper for the corn.
