    Ingredients:
    For the dulce de leche mousse
    1 can of condensed milk (100 grams of dulce de leche)
    1 lime (20 grams of juice)
    3 leaves of gelatine
    100 grams of double cream
    40 grams of egg white
    40 grams of sugar
    75 grams of mascarpone
    For the cherry ice cream
    350 grams of cherries
    170 grams of egg yolk
    100 grams of glucose
    160 grams of sugar
    400 grams of double cream
    For cherry broth
    400 grams of frozen cherries
    40 grams of sugar
    2 teaspoons of potato starch
    2 teaspoons of water
    For the spongecake
    200 grams of eggwhite
    60 grams of almondpowder
    40 grams of sugar
    13 grams of flour
    a pinch of salt
    For the sable dough
    150 grams of flour
    50 grams of icing sugar
    100 grams of butter
    1/2 an egg
    1 lemon zest
    1 vanilla pod
    For the chocolate cream
    100 grams of dark chocolate
    250 grams of milk
    65 grams of sugar
    100 grams of egg yolk
    25 grams of cornstarch
    For the chocolate glaze
    100 grams of cacao butter
    100 grams of dark chocolate
    Schedule:
    Day 1
    Start by making your dulce de leche.
    Prepare your cherry ice cream base.
    Prepare your sable dough.
    Prepare your spongecake base.
    Prepare your dulcet de leche mousse.
    Prepare your chocolate cream.
    Make your cherry broth.
    Day 2
    Spin your ice cream.
    Bake your sable dough.
    Finish the chocolate cream.
    Fill your cherries with the chocolate cream.
    Bake the spongecake.
    Make the chocolate glaze and finish the mousse.

    Jules, if using sous vide method, may I cook the frozen cherries with sugar at 85°C?

      Thanks for the tip, but I’ll stick to the grams. It’s much more precise, definitely in small amounts
