I did something similar for my gf's birthday. A base of pistachio pecan prailine, next layer up was a carrot cake sponge, then a walnut mousse layer, then I put that in a molde of raspberry mousse made with ground up dehydrated raspberries. After freezing and unmolding I patched any bubbles with partially whipped cream then sprayed on white chocolate to structurally stabilize it then put on the mirror glaze and finished it with red ribbons of molded chocolate and gold dust. Wish I could send you a picture.

Maybe get creative on the incorporation of the actual fruit , molded frozen same technique then Incased in mousse dipped in mirror glaze and decorated to match the fruit, would this work? Once again you get my vote! 🏆 I do have a question about gelatin please...I made individual desserts this week using pastry rings, no-bake cheesecake gateaux with a top layer of fresh berries and dragon fruit covered in gelatin, and they turned beautiful and tasty. However, the gelatin on top was not very clear, it looked a bit yellow and I don't know if the problem was the product I bought or the way I handled it. I have not been to culinary school but I love cooking and I will keep trying, so I hope you can share your knowledge...Merci beaucoup! 🙂
