Questions about your Pâte Sucrée. Do you use water to seal the sides of the ring to the bottom? Do you always do an egg wash and rebake the tarts? Do you believe in blind baking the tarts or bake as is using preforated tart tins and mats?
1. No, they will seal without. 2. Yes, then they become nice and shiny. 3. When the dough is prepared like it should and baked out of the fridge this is not necessary
