Ingredients
For the tartelette:
180 grams of flour
4 grams of salt
80 grams of icing sugar
30 grams of almond powder
110 grams of butter
30 grams of egg (1 egg)
For the raspberry cream:
80 grams of egg yolk (4/5 eggs)
30 grams of flour
200 grams of raspberry
200 grams of double cream
80 grams of sugar
For the lime cream:
250 grams of milk
2 limes
50 grams of sugar
50 grams of butter
40 grams of egg yolk (2/3 eggs)
25 grams of flour
100 grams of dark chocolate

Questions about your Pâte Sucrée.
Do you use water to seal the sides of the ring to the bottom? Do you always do an egg wash and rebake the tarts? Do you believe in blind baking the tarts or bake as is using preforated tart tins and mats?
1. No, they will seal without.
2. Yes, then they become nice and shiny.
3. When the dough is prepared like it should and baked out of the fridge this is not necessary
what temperature should the chocolate reach?

Double cream is in de Nederlandse supermarkten moeilijk verkrijgbaar. Wat zou je als alternatief kunnen gebruiken? Slagroom? Een slagroom-mascarpone mengsel?
