- Hey guys! Today my vegetable supplier Rungis invited me to learn more about the world best cherry, the cerisa cherry. After that we’re using it to make a beautiful cherry dessert inspired by a Black Forest gateau. It’s a chocolate mousse with a cherry interior, a cherry and vanilla gel, a cherry and chocolate cream and a chocolate vanilla powder. All great recipes, so enjoy guys!

black forest is literally my favorite dessert and I don't have a sweet tooth personally so hardly ever eat them in general but there is something magic about cherries and chocolate, would have personally gone with a praline tuile though, because I love those too.
that looks so delicious! we had no cherries this year! weird weather all year actually, none of our garden has done good either. there are some apples growing at least.

Looks to be a pan but i don't know what the reason would be.
its a scraps bowl. its like drawer you can pull out and scrape your food waste into while cooking. and then empty it at the end.

1 - Ok so, @3:11 this always confuses me. I've been told countless times to never freeze preparations that have agar agar. Been told that agar is sensitive to freezing and can become destructured. I've seen people actually use Agar to clarify stocks. Many use gelatine instead of Agar to freeze inserts or gelified creams. So which is it ? I guess i already have my answer since you're using it but i still fail to understand why so many avoid freezing agar then ? Or is there a limit ? Does it get destructured if it's left 48h or over a week in the freezer ? Also...
2 - @8:15 How about something with Melon ? Langoustine ? or Cherries again..Maybe pickled, or just used in a salty dish this time. Ok i guess it would be redundant after this video lol. Anyway, keep up the good work.

Take the techniques and apply them to whatever you can afford, use your own imagination and don't make such absurd critics.
