- Chicken Pho is so delicious and hearty for the winter season. It has some of the best spices that reminds me of the winter season like cinnamon, star anise, fennel seeds, cloves, coriander seeds and cardamon. Chicken Pho aka Pho Ga is literally chicken soup for the soul. The best part about the chicken pho recipe is that it's made in a pressure cooker or instant pot. I don't even bother charring the onion or ginger. I dump and go. It's so easy and no fuss in making chicken pho. I use a mixture bone in chicken thigh and boneless chicken. I recommend using bone in chicken for a rich chicken pho broth. Chicken pho makes me nostalgic of my childhood and it's also one of my all time comfort food. #chickenpho #phoga #pho #pressurecookerchickenpho
Chicken Pho Recipe:
4 chicken thighs
2 boneless chicken breast (feel free to use bone-in for an even richer broth)
1 large onion, peeled
2 knobs of ginger, peeled
1 bunch of cilantro root
2 -3 TBS of rock sugar (sugar of your choice, I end up adding an additional 1 TBS at the end)
1-3 tsp salt (I started with 1 tsp and added an additional 2 tsp at the end)
2 TBS fish sauce
10-12 cups of water
Rice pho noodles, follow the instructions on the package
Spices for Chicken Pho:
3 cinnamon sticks
8 star anise
2 TBS fennel seeds
2 TBS coriander seeds
5 cloves
2 cardamons
Pho Toppings are optional:
thai basils
cilantro
green onions
bean sprouts
lime
fried garlic
sriracha sauce
hoisin sauce
It took my pressure cooker 15-20 minutes to pressurized and then the time started for the 15 minutes I manually entered. If you plan on using a whole chicken, please use the manual button and time it for 30 minutes.
***Please let your pressure cooker come to a natural release vs a quick release. Be careful using your pressure cooker because the steam is extremely hot.

Noodles needs hot water to soak and just blank for 30 seconds to 45 then drain and cover with cloth for about 8 to 10 minutes ! The noodles is fully cooked just needs to rehydrate, I'm the noodles manufacturer. People are doing it all wrong!
Don't season the broth until it's done.
