Vietnamese 'Pho Ga' Chicken Noodle Soup | Thuy Pham-Kelly

    INGREDIENTS:
    (Serves 4-6)
    1 Chicken (Free Range & Corn-Fed ideally)
    200g Pho Noodles
    5 Star Anise
    1 Teaspoon Coriander Seeds
    2 Unpeeled Onions
    20g Unpeeled Ginger
    6 Inch Span of Daikon Radish, peeled
    6 Stems Sweet Basil (or Thai Basil)
    500g Bean Sprouts
    6 Stems Spring Onions
    2 Chilli Peppers
    2 Limes
    6 Shallots
    1 Teaspoon Fish Sauce
    4g Rock Sugar
    1 Teaspoon Salt
    10ml Hoisin Sauce
    10ml Sriracha Sauce
    Roast the ginger and onions for approximately 5 minutes on an open flame, until you see the juice of the onion bubbling on the surface and the ginger is fully blackened. Then clean under a cold tap and peel the blackened outer layer.
    In a dry pan roast the spices on a medium heat for 2 minutes.
    Bring 3 litres of water to boil and add the whole chicken, the daikon and the roasted onions and ginger. Place the roasted spices into a strainer and position carefully at the bottom of the pot. Lower the heat and simmer for 1 hour.
    Once an hour has passed remove all the ingredients from the pot and carefully remove the foam from the surface of the broth.
    Place the chicken to one side to cool.
    Add the fish sauce, salt and sugar to the broth and leave to simmer for a further 30 minutes.
    Soak the pho noodles in lukewarm water for 20 minutes. Drain and place into a pot of boiling water for 3 minutes. Drain well and leave to cool.
    Take a handful of noodles and place into a bowl, adding a small handful of bean sprouts. Tear the chicken into large chunks and place on top. Now pour the broth into the bowl laving a small amount of room for the herbs.
    Remove the top and bottom of the spring onions and slice very thinly lengthwise. Soak in cold water for 5 minutes until they curl up, then drain and place on top of the chicken.
    Sprinkle on a teaspoon of chopped spring onions, a couple of sliced chillies, 3 or 4 stems of sweet basil and a handful of dried shallots.
    Lastly squeeze 1/4 of lime into the broth to balance the flavours and serve with a hoisin and Sriracha dipping sauce.

      I think this is phở gà sài gòn not phở gà hà nội, I don't know how you define traditional recipe but for me this is not a traditional recipe. Phở is from the north of VietNam after all. But you have done a wonderful job.

    Ahh, I just wanted to know how to correctly pronounce my favorite pho ga and ended up watching this video. Wow, her love for this dish to perfection is amazing. I find her voice and British accent so soothing and relaxing. :) Definitely two thumbs up!!

      Club Soda That's actually not true. Beauty is the way light reflects off of someone's face so that would directly correlate to bone structure, which is obviously hereditary and completely independent from diet. I guess you could argue that your skin looks better when you eat healthy but that's like the cherry on top; genetics are the sundae.

    This is legit! I have seen my dad cook this dish so many times and I have to say that this is the absolute right way to make this dish. From the seasonings to the process of clearing the broth. It's amazing! I love this dish. Such great comfort food!

    One of the best pho recipes I've seen on RUclips! Very authentic south-Vietnamese pho, though the classic recipe is from the north and differs a bit. Usually sugar and bean sprouts are not added, while sliced lemon leaves are an essential part of pho ga bac. Also as a suggestion chicken can be cooked for a bit shorter time, so the meat would be not be falling apart (30-40 minutes depending on the size), following that the meat would be separated from the bones and the latter would be add back to the broth to simmer for an hour or more (to gain more flavor without overcooking the meat). But no way this undermines this great recipe and video! Keep it up and I would love to see more of your cooking!

      +no coat with the meat, noodles, and veggies inside, it is a meal in itself for Asians. It's not "only soup" as one would perceive in a western sense as this would be categorised under noodles dish instead of soup.

    As a Vietnamese, this is actually the first time I see someone (yes, I'm aware that she is Vietnamese too) make a real pho ga after I've watched so many people trying to recreate it but failing even though I know how much they've tried.

This is absolutely one of the best videos I've seen on foodtube :) I used to live in Cambodia and go to Vietnam on a regular basis, and pho is one of my favourite dishes :D I will be making one this week.     This looks real good,.. I make the same thing but never seared an onion or the ginger. Ill give it a try. Im came from So. California and was hooked. Now in upstate NY I found a Vietnamese market and got all the original ingredients.

      +Paul Kitas searing an onion REALLY changes the taste. I even cut it in half and put under a hot grill until golden :3

      +Paul Kitas Yes, you def should try to sear the vegitables. I worked in a restaurant where we made pho. And we always seared the veggies. We made a big pot but we made it on low heat for atleast 12hrs. Also in place aof the chiken we put dug bones from our duck comfit. And put the duck meat in at the end in the bowl, it was baked with fish sauce, siracha and some greens. The noodles were boiled seperate from the pho to keep the pho clean. It was an amazing dish.

      +Paul Kitas It's a tip my Mum taught me when I picked up my first saucepan! I imagine it's a similar story in a lot of Vietnamese households. Mummies always know the best tips!

      Thuy Diem Pham :D Mums and grandmums do have their secrets. However i am Latvian. Andthe chef i learned the recepy from is an American Latvian, who studied French culinary and i guess some Vietnamese too.

    This is such a pretty dish! Chicken soup is one of my favourites. I may be brave enough and try this out🙈. The white radish veg is called "mula" in my language and we use it in fish curries! I love that veg it kinda reminds me of the stalks on a cauliflower :o) thumbs up from me!

    I always wondered how Pho got a great smoky flavor. It's from the fire-roasted white onion and ginger! Also, lots of herbs are used to flavor the noodle broth. This explained why Vietnamese cuisine, including its noodle soup Pho is so fresh, flavorful, delectable, and healthy.

    I just had my first bowl of pho yesterday at a restaurant after avoiding it for so long- and it was so delicious!! been worried that the restaurants would put too much salt and msg in it though and been watching my blood pressure. . so was pleasantly surprised to know that it's a simple healthy recipe! would make it for my husband and yes the host is so beautiful too! I love how her accent seamlessly changes from British to Vietnamese :) cute!

    Pho was not in my vocabulary before my trip to Vietnam. It's now one my comfort foods when I get sick. Pho is healthy and delicious. Pho is one of the iconic Vietnamese cuisine. It undeniably has the most recognizable wonderful flavor and taste.
