Kam Heong Chicken/甘香雞: Fried Chicken With a twist

- Hey friends, today I will be sharing a recipe on Kam Heong Chicken. It's essentially a fried chicken dish with a unique sauce from Singapore/Malaysia.
Ingredients:
(Marinade)
1.2 kg Chicken
2 tbsp Meat Curry Powder
1 tsp White Sugar
1 tsp Turmeric Powder
3 tbsp Oyster Sauce
1 Fresh Egg
(Sauce)
5-6 Sprigs Curry Leaves
2 stalks of Lemongrass
7 cloves of Garlic
5 Shallots
5 Pieces of Dried Chilli
1 tbsp Gula Melaka
3 tbsp Oyster Sauce
2 Bird's Eyes Chillies (Optional)
30g Dried Shrimps
About 5-6 Tbsp of Cornstarch + 1 tsp salt for batter

Kam Heong resipi, end up @ 6.20m , you mentioned tom yam chicken was ready.

Looks delicious but I'm curious about sugar, isn't there a bit too much ?
Palm sugar is less sweet than normal sugar, also you can vary the quantity to your liking :)
Instead of palm sugar, use Indonesian kicap manis.
