Trying to make keto pastries look exactly like the ones I've made in the past at my pastry shop jobs. Cheese danish are by far my favorite, delicious with a cup of coffee!
This was my first attempt at a fat head dough recipe and they turned out fantastic. It was just like I remember. You would never guess there was mozzarella cheese in the recipe. I have a lot of work ahead of me to master the folding technique, but thankfully the folds don’t effect the quality of taste. =) I also just want to give you kudos for giving credit to CJ for being the original creator. Can’t wait to make another of your creations.

Yeah my RUclips was originally gonna be upgrading others recipes or combining the best elements of a few but then I discovered there weren't many recipes for things I wanted, like tiramisu with real lady fingers, sour cream glazed donuts, tagalong cookies. So I just started figure out my own recipes.
I have a new cream cheese danish recipe- ruclips.net/video/v0KE5GgpavI/видео.html and you can put any jam on it to make it different. Just did blueberry lemon using that recipe but adding lemon zest and blueberry jam. Also have a jam recipe you can use to make any flavor you want.
I just made these cheese danish and they are great! Not as good looking as yours but very tasty indeed! How do you store these? It’s only me so I need to be able to come back for a few later. Can you freeze these for a later date?
Awesome!!! Glad you enjoyed!! You can store them in the refrigerator for over a week. And you can freeze them, they may not have the best texture once thawed but will still be good.
I'm going to have a go at making these, but don't have psyllium husk. Could I substitute it for a protein powder or something else? (Also I'm not really supposed to have Almond, but it's SO hard to find a pastry dough without it and these just look so amazing lol)
I would up the xanthan gum to 1/2 tsp. If you dont have psyllium but it does give a better chew to the pastry. And I've made a fat head dough with all coconut flour before. Its 3x more powerful than almond flour so you should be fine with just adding 2 more Tbs of coconut flour, if you want to try that.

Yeah I bought psyllium husk online, ive never seen it in the baking aisle but check the supplement aisle I think thats where it will be if they have it because its a dietary fiber.
@@KetoUpgrade okay...it is UNFAIR how amazing these are. I did as you suggested and upped the xanthan, and subbed coconut flour for no almond, and I also doubled the recipe because I KNEW I was gonna inhale like, 4 of them...which I did...(oops) they came out so freaking good!
I'm sorry I actually can't, I hate my new hand mixer. The one in this video I should have just tried to fix the connection on the cord. They just don't make them like they use to. I got mine from a friends mother in law who passed.
I've never heard of anyone using avocado oil for butter in a fat head dough. I'm not sure it would work because avocado oil isn't solid at room temp like butter is. But you could try it, the only recipe I use oil for and have had an ok outcome for is cake. If anything I feel like coconut oil would be a better substitute.

Yeah, that works, I go threw so much that I buy it powdered. But if I'm in a bind for a recipe I'll grind it.

Can you recommend a good quality hand mixer? I hate taking out the heavy kitchenaid for small jobs, but my hand mixer is on its last legs. Thanks!
