      Made this today!! Excellent taste; I baked mine a little too long (used a 10 x 7 pan and should have shortened the baking time) My crumble sank into the cake too. I'll make some adjustments and make it again, but it's delicious!

    I am loving this channel!!! I enjoy baking so much, but have found a lot of the "keto-fied" recipes lacking. Almond flour texture is kinda yucky. Thank you so much for all your work! The amount of research clearly pays off.

    I love how you show you are not perfect! We all mess up, but RUclips videos tend to make the presenters look superior to us mere mortals. 😆 Your training as a pastry chef definitely helps with creating these fantastic recipes. You may want to go back into the description box and decrease the number of eggs in the recipe to 4. Thanks for all the tips on how to get the cinnamon layer just right. 🎄

    I think I love you….Ha Ha, really you are so great. You admit your mistakes and you don’t lie about it. I do that alot and really hate it when utubers show pictures that just don’’t match what they actually made and came out with. I know I can vouch for other fellow keto bakers when I say that many times my version just doesn’t match what they show as the finished product. And it also doesn’t taste very good. Always tell and show the truth. We all are dieting for a reason, and I didn’t get fat by cooking bad tasting food. I love to cook and feed my family better than restaurant grade food. Thanks for doing it right. Yes I do follow and am subscribed.

    I just made this in a 9x13 and damn son it's better than my traditional coffee cake. It came out looking darker than yours but turns out it didn't burn it was just extra cwispy }:-D So effing good as usual. We're not worthy!

    i made this in 9x9 pan, oooooooooh myyyyyyy!!! I cannot tell this apart from ones i used to eat years ago, the little debbie coffee cake, this is soo good!!     This is great! I'm a baker, a designer, and have a p/t job and literally have no time to experiment with keto recipes for myself. Plus it's expensive as all get-out, goes without saying. Loving what I'm seeing on your channel, and crumb cake is one of my favorite things of all time. I even have all the ingredients on hand, it's a miracle.     OH MY WORD! Saw this a while back but just made it today to snack on during grandson's Special Olympics tomorrow. Could not be easier. Could not wait for it too completely cool. I know I know, always let keto baked goods cool before cutting. Didn't wait when I made your yeast protien sparing bread because it looked and smelled so crazy amazing. Yeah, it fell a little but tasted great. Made it 15min cooling before cutting a tiny corner of this to taste. 😋 Insaine good, insaine texture. So soft, not too sweet and Oh So Delish!! Thank you for all your hard work. Can't wait to share this tomorrow.

    Don’t like coconut flour so tried substituting Inulin powder. The cake came out pretty fluffy - I recommend trying it. A delicious recipe!

      Thanks for sharing. The only problem with inulin is for many it creates painful gas and bloating. Especially if your body isn't use to ingesting a lot of it. But good to know that can be substituted though.

    Oh my goodness! I made this today and my kitchen smelled SO yummy. I just had my first bite and it delivered, even though I added too much butter to the crumble-in the end it tastes so buttery. I used Besti monk fruit/allulose brown sugar blend, the first time I used it and it is now on my stock up list. I really like that it isn’t necessary to use almond flour. I don’t hate it but it makes the texture of baked goods heavy with an undertone flavor that is distinct. You rock the kitchen!

      Lol, it will be great for x-mas morning. Yeah I wrote in my blog that I had a bunch of successful crumbles, this one is just 0 carb which is nice. Just follow my way of doing it and make sure there is enough butter so it's a crumble texture and it should be good! Happy Baking!

    Thank you for the recipe! I made it this afternoon, it came out pretty good, maybe a bit dry, I might have baked it too long? After 55 minutes, the middle part was still wet, so I left it for another 3 minutes. It looks beautiful and spongy. I don't like the taste of protein powder in the crumble. Next time I'll put more spice to cover up the protein smell. In any case, I already ate 1/4 of the whole thing, so it's good!

      Yeah I think it would turn out softer in a larger pan because you wouldn't have to bake it as long. You can replace the whey protein powder with egg white protein if you prefer. Glad you liked it!

      The oat fiber isn't super essential in the crumble, I made a bunch of successful ones with different keto dry ingredients. Just got to make sure the texture is right with enough butter. Can use egg white protein or coconut flour instead of the oat. Happy Keto Baking!

    Have you tried erythritol plus stevia yet? Stevia makes the cooling effect of the erythritol go away. The erythritol takes away the bitter taste of the stevia. For every tbl spoon of erythritol use 1/4 tsp of stevia. Use that percentage whether you are using cups or grams. When I use this combination, people can't tell I'm not using sugar. I have used monk fruit before. I don't remember liking it as much as my erythritol plus stevia combination. I do like allulose though it's not as sweet. I will try your way. Can you tell the monk fruit is other than sugar in your baking? Aftertaste? I am excited about what you are doing. Thank you.

      What I use is a monkfruit/erythritol blend, the only time I can taste the cooling effect is when I use it straight in a very simple recipe. For whip creams, frostings and fillings I usually use a combo of the powdered monkfruit/erythritol and liquid or powdered stevia or monkfruit. I don't notice any after taste in baked recipes like this. I notice the cooling effect in recipes that need a lot of sweetener though. Glad you are excited, you are welcome!

      Aww thanks! Lemon curd should be easy just use a regular recipe and use allulose and it won't crystallize maybe up the amount a little because allulose is less sweet, unless you like your lemon curd really tart, lol.

      @@whales91 ah that might melt it kinda of fast. If it's not crumbly before putting on the coffee cake, it may just need a little dusting more of protein or oat fiber to soak up some butter.

    Thank you for showing even the pro's sometimes don't get it right. Makes us at home feel better when we do. 😉
    That tip, whipping the room temperature eggs and sweetener was a game changer in my kitchen. Even with recipes that are not yours. (*gasp*) I forgot that tip from my gluten/sugar filled baking days.
    I'd like your thoughts, can the whey protein isolate be substituted out with egg white protein powder in your recipes?

      Yeah I was pretty upset about it though. I work so hard on recipes then screw them up when I go to film, urgh frustrating. Yeah it's sometimes the small things in a recipe that makes all the difference.
      Egg white protein makes keto baked goods crispy when just used as a flour substitute. I use egg white protein in my crispy cookie recipes.

      I can confirm the egg white powder doesn’t work as well. I made a quarter recipe twice - once with whey protein isolate and once with egg white powder and my husband said the whey protein isolate was definitely more moist (like coffee cake) and the egg white powder was distinctly drier (more like angel food cake). Overall, still an amazing and delicious recipe, thanks very much for creating it! How do you store leftovers? On the counter or in the fridge and for how long? Thanks again!

I stored them on the counter until they went moldy I think it was over a week at least. I just have so many baked goods and didn't go to anyone's house after I shot my videos that week, lol. But can store in the fridge, I just mic refrigerated baked good usually at 50 percent power for 30 seconds to get the chill off of them. You are welcome!

      Probably and just go off my muffin recipe for times and just make sure they are firm in the middle and bounce back before you take them out of the oven. Glad you are enjoying! You're welcome 😊

      Update: made a half recipe…it was a bit dry…I may have overbaked a bit, since I wasn’t sure just how long to bake in the smaller loaf pan. I will definitely make again, what do you think of adding some unsw almond milk or a bit of extra sour cream? Will that moisten it more? Or just try it again and bake less? It had a great flavor and texture though! 👏🏼👏🏼👏🏼👏🏼

    This looks good but I don’t have whey isolate powder. Can I substitute egg white protein powder instead? Is there a different substitute that you would recommend?

      Someone said they tried it and it didn't work in this recipe. It seems to work in recipes that aren't fluffy like my cookie recipes. I haven't found a substitute yet for whey without having to change the whole recipe. I hope to one day figure it out.

    Just put this in the oven. I might have to freeze a few pieces to have for Christmas! I don’t use oat fiber so I subbed psyllium husk fiber. Hope it still tastes as good as it looks!

    Thank you for creating, researching and trying different ingredients other than the usual almond flour. So happy! Quick question: although I have many kitchen appliances such as a 14 cup Cuisinart food processor, immersion blender, etc..... I do not own a stand mixer. Can this recipe be prepared without a stand mixer and if yes, any tips on that?

      You're welcome. You can do this recipe with a hand mixer. Just mix the eggs and sweetener thoroughly and you should be good. Just the nice thing about the stand mixer us you can do other stuff while it's whipping.

    It has been a couple of days since making this. I wonder if the cake portion could be the bread for the recipe for bread pudding? Then add walnuts, more spices, and maybe even a few unsweetened raisins as they are already naturally sweet. Also maybe dried unsweetened cranberries...or even fresh (add sweetners the day before...put in the fridge....squeeze the juice out and use a few to replace the raison?) I never used dehydrated fruits so unsure how adding cranberry or strawberry or blueberry would taste in replace of raisons?

      That would probably be amazing!!!! I'd use fresh cranberries right in the bread pudding, they will burst in the bread pudding like they do in cranberry muffins when they bake, yum!

      @@colorfulforesight Fresh cranberries are really hard, I don't think you can really squeeze them. You could chop them up and add the right to the bread pieces.

    I followed the recipe to the T, but my coffee cake didn't rise anywhere near as much as yours and was pretty dense--it still tasted great though! 🙂
    Is there anything I can do the next time to make it rise more & be more soft?

      Maybe new baking powder? Did you weigh the ingredients? Even using different brand can change the outcome. Keto baking is tough with all ingredients not being the same across brands.

    I made it. It is delicious. I bet it will taste better tomorrow and the following days as most keto bakery taste better the following day.
    I can see how the texture to the Whey plus the xangum gave it that slight puff that the real Cinnamon cake does. What does the oat fiber does to the crumbs excatly?

      I would say after at least 8 hours! The oat fiber acts as a good 0 carb flour with a little flavor. But coconut flour would work just make sure there is enough butter to make a crumbly texture like how mine looks in the video.

      1. I'm not sure what effect that would have on the finished product. You can definitely bake it the night before, it's better after about 8 hours, not fresh out of the oven.
      2. Yeppers! It was derived for the pumpkin muffin recipes!!!
      3. A little flavor and is a good replacement for flour but I tried all combos and there were many good outcomes so coconut flour would work just make sure you have the right consistency of crumble

      I don't recommend using allulose on anything that has to bake over 30 minutes because it tends to get too dark. I tried it in my zucchini bread and it almost looked burnt before it was cooked all the way. Yw

      I did not eat the 5 egg because I had so much coffee cake after having to remake it. The 5 egg was just too spongy, dry and eggy and less bread like.

    😋Update: This cake taste better 8 hours later to the next day. Btw, I like this cake without the added crumble topping. It saves some calories and ingredients. I just add some additional cinnamon and sweetner plus some crumbled walnuts on top.. Yum! Without the added sugar from the crumble, I just made the batter be like 1 cup & 1 tablespoon of sweetner instead 3/4. Thank you Keto Upgrade!🙏🏾 Although I like coconut flour, adding the lactose free isoprene whey protein powder really helps break away from the ‘keto flour taste’. Genius.
    😌And being Lactose intolerance that it helps having only the butter for the cake and not also the topping. Although I found a Lactose free butter at stop and shop that I have to look into. 🤜🏼🤛🏿

    I have trouble with erythritol plus can not tolerate the cooling effect :-P hahaha
    I have very good results subbing any one or a blend of allulose/bochasweet/xylitol ( leave out xylitol if You have pets).
    Allulose allows Your baked goods to brown beautifully!
    Plus none of these sweeteners crystalize like the erythritol does.
    Simple syrups are easy with the allulose.
    FYI for those who can't handle the cooling effect or crystalization.

      I agree with everything you said but I have found with anything that has to bake longer than 45 minutes the allulose makes it almost look burnt. I tried it with my zucchini bread recipe and it did not look appetizing once it was fully cooked. That's why I didn't use it for this recipe. I use allulose regularly for anything that requires heating on the stove. Thank you for sharing! Merry Christmas

      I agree... my pumpkin custard was having the same problem of over browning but was able to solve it by lowering heat & letting it go longer... might not work for anything beside custard though :-(
      Such a balancing act to get these familiar 'treats' without the super addictive ingredients.

      The texture it gives, no grittiness in the baked goods, plus you need a lot less coconut flour. Plus I have an allergy in the family and he is keto with my mom. I feel bad for those people because every packaged keto product has almonds in it.

      You can freeze just about anything. Wrap tightly, get as much air out as possible, I usually freeze portions so I can just take out a piece at a time. Of course it's not going to be as good as fresh baked but nothing usually is.
