I lived and worked in Dubai in the early '70s servicing helicopters for the oil rig runs. Shawarmas were my favourite street food then and I haven't had any since living back in the UK. So.. a few things. One, thank you for the recipe. I just made it and it’s great. Can’t wait to try other meats like beef and lamb. However, at 6:09 I can clearly see that you used twine ;as did I) but didn’t mention it. Trying to get it so the meat doesn’t flop around is actually a pain in the butt. Also, although both of ours looks almost exactly the same size, (and the same air fryer) I had to cook for 1h 40mins to get internal temp to hit 165, not 45mins. All and all I had a lot of fun and look forward to trying it again. I also made the tahini sauce as well as toum (garlic sauce). Very interesting
I’m so curious as to if the seasonings have penetrated to all that white meat or is it advisable to pound out/thin/tenderize the meat so it soaks through better?
The marinade tenderizes the meat. For the best flavor marinate for 24 hours. I have not tried thin slices of meat in this air fryer rotisserie. Some meat may fall while rotating if not compressed properly. Thin slices of meat are recommended in a vertical rotisserie like the traditional method to cook shawarma.
