    120-150ml Olive Oil
    6 cloves garlic
    Zest and juice of 2 lemons
    2 tablespoons tomato puree
    1 Teaspoon turmeric
    2 teaspoons black pepper
    1 Tablespoon paprika
    1 Tablespoon cumin
    2 teaspoons salt
    1 Teaspoon Aleppo chilli flakes
    1/2 allspice
    Pinch cinnamon
    Don't mind me. Just using the comments box to write down the marinade ingredients so I remember 😂

      It’s more of I guess a salsa for the chicken than a salad. It’s Roma tomatoes diced English cucumber diced Italian parsley finely chopped and lemon juice black pepper and olive oil. Really simple and adds a little more of a citrus taste to an already amazing dish by itself.

    Hi, as a newcomer to the Kamado world, I decided to have a go at your Chicken Shawarma recipe today. We had the family around and although it took longer than expected to cook it was a massive hit with all, even the two grandchildren who are nearly 3 years old. I substituted Mayo with garlic mint yoghurt. My daughter took some home for her partner and he had to phone me to say how good it was. So a big thank you for the video and recipe.

    Really nice video, I think I'd like to see if I can give this a go on my Barbeskew (admittedly not quite the same wow visual factor you have but I like it all the same) because that chicken Shawarma looks so good. I like the clamps you've used on your skewer, they look proper strong, do you remember where did you get them from?

      Hi. The clamps came with the rotisserie. Give it a go, you can cook it on skewers too and it'll be fantastic!

      @@TheSmokinElk I did this on the weber with the rotisserie, burgers etc on the grill around the outer circle (grill centre not in). Tasted fantastic and everyone loved it. Great recipe - keep them coming. (I have since done a lamb shoulder/pork shoulder kebab too which was similarly received by my friends) all thanks to you guys showing us how to get it done. Thank you.

    Great video! I’m just about to pull the trigger and get one of these braai’s and nice to see it in use! Have you ever cooked a large chicken with the rotisserie? Or even a turkey...? Thinking Xmas dinner turkey on this would be nice if the heat and cooking times were worked out well

    Nailed it lad. I’ve two questions if you don’t mind. 1) did you grease the grill for the bread not to stick? And 2) where did you get your slicing knife from and what’s it called? Thanks for any help.

      No need to grease the grill but it wont do any harm. The knife is a Victorinox 12 Inch Fibrox Pro Slicing Knife with Granton Blade

    This looks bloody superb, I wanna try this on my weber charcoal kettle rotisserie going in direct heat what temp should I am for and time wise ?

      Thanks very much. It'll definitely work on the kettle - aim for an internal temp of 73c. Cook temp of around 200c

    Looks like the marinade, for 2kg chicken is:
    Olive oil,120-150 grams;
    Garlic, 6 cloves;
    Lemon, juice and zest of 2;
    Tomato purée, 2 tablespoons;
    Turmeric, 1 teaspoon;
    Cracked black pepper, 2 teaspoons;
    Paprika, 1 tablespoon;
    Cumin, 1 tablespoon;
    Salt, 2 teaspoons;
    Aleppo Chilli, 1 teaspoon;
    Allspice, ½ teaspoon;
    Cinnamon, pinch.

    KEBAB INGREDIENTS:
    2kg chicken skinless boneless chicken thighs
    Marinade:
    120-150ml olive oil
    6 cloves garlic
    Zest and juice of 2 lemons
    2tbsp tomato puree
    1tsp turmeric
    2tsp black pepper
    1tbsp paprika
    1tbsp cumin
    2tsp salt
    (Optional) 1tsp chilli flakes
    0.5tsp ground allspice
    Pinch of cinnamon
    Mix all of the above to form the marinade, then mix in to the chicken.
    Leave to marinade in the fridge for 5+ hours.
    FLATBREAD INGREDIENTS - makes 6
    250g strong white bread flour
    1tsp.salt
    1tsp sugar
    3.5g fast acting yeast
    2tbsp olive oil
    150ml warm water
    Mix until a dough, then knead for 10 minutes until smooth and stretchy. Form in to a ball and rest in a covered bowl for 1 hour until doubled in size.
    When rested, divide in to 6, roll out and cook.
