It’s more of I guess a salsa for the chicken than a salad. It’s Roma tomatoes diced English cucumber diced Italian parsley finely chopped and lemon juice black pepper and olive oil. Really simple and adds a little more of a citrus taste to an already amazing dish by itself.

Hi, as a newcomer to the Kamado world, I decided to have a go at your Chicken Shawarma recipe today. We had the family around and although it took longer than expected to cook it was a massive hit with all, even the two grandchildren who are nearly 3 years old. I substituted Mayo with garlic mint yoghurt. My daughter took some home for her partner and he had to phone me to say how good it was. So a big thank you for the video and recipe.
I'm trying this recipe tomorrow - got the chicken in marinade over night - I'll tell you how it goes. Thanks for all the vids have made a great difference in my bbq'ing skills.

Great recipe - keep them coming. (I have since done a lamb shoulder/pork shoulder kebab too which was similarly received by my friends) all thanks to you guys showing us how to get it done. KEBAB INGREDIENTS: 2kg chicken skinless boneless chicken thighs Marinade: 120-150ml olive oil 6 cloves garlic Zest and juice of 2 lemons 2tbsp tomato puree 1tsp turmeric 2tsp black pepper 1tbsp paprika 1tbsp cumin 2tsp salt (Optional) 1tsp chilli flakes 0.5tsp ground allspice Pinch of cinnamon Mix all of the above to form the marinade, then mix in to the chicken. Leave to marinade in the fridge for 5+ hours. FLATBREAD INGREDIENTS - makes 6 250g strong white bread flour 1tsp.salt 1tsp sugar 3.5g fast acting yeast 2tbsp olive oil 150ml warm water Mix until a dough, then knead for 10 minutes until smooth and stretchy. Form in to a ball and rest in a covered bowl for 1 hour until doubled in size. When rested, divide in to 6, roll out and cook.

No need to grease the grill but it wont do any harm. The knife is a Victorinox 12 Inch Fibrox Pro Slicing Knife with Granton Blade
