Spices first then beets
I always have the salt water prepared ready to use . I keep my brine on the counter in a mason jar
A suggestion to keep your spices down: Remember, the spices will leach out their nutrients and flavors similar to tea. Get a thin flexible cutting mat, scribe a circle on it using the ring, cut it out, and add a couple of small holes about 1/8 inch. Put your beets (or whatever you chose), salt, and spices in, cover with water, then carefully insert the plastic cover, pushing down so completely submerged, then place your glass weight on top, and push down more to ensure complete immersion. Cover and wait. That will keep your spices in the brine allowing the flavor to transfer.
Anna, try a teabag under the beets for the spices! You can buy them empty and ready-to-go, and the veggies will hold ithe spices down!
They have those at my local coop and I never thought to use those for ferments! I think you just changed my fermenting world!!! Thank you :)
@@FermentedHomestead - sure! I even make my bone broths using cheesecloth... one bundle up and out and the straining is 3/4 done.
@@alfalfacats7289 That makes sense but I usually just run broth through a muslin cloth and/or mesh strainer depending on the purpose.

@@alfalfacats7289 you're not alone in that, funnels and pots inside of bigger pots are the best!
I love them with carrot and fresh garlic and grated ginger. I use a pickling crock with a water lock on top. They still weights to put them in on top of the brine to keep most of the stuff under the solution

Thank you. I have many beets i wanted to be able to preserve awhile. How long do you think they will last. You mentioned wait 4 days so does that mean i need to eat my beets then? What am i able to do with my beets im not able to eat now..plus id like to have them year round. Thank you.

An old trick, for the #Homesteader:
Stir it up with yer bare foot. It'll get it to #ferment a bit quicker, an improve the taste.

If you have never done this before, why are you showing people how to do it OMG you know Nothing About it.
Because you don’t have to be an expert to do something, the early years of my channel (and some of it still) was about showing the learning process. There’s a lot of little things “experts” don’t remember to share that are confusing to beginners as I was. No need to be dick head about it
