    Fermented Beets Recipe:
    Ingredients:
    2lbs of beets (roughly 10 small/medium beets)
    4 sprigs of fresh bronze fennel
    4 cloves garlic
    2 tsp peppercorns
    Brine: 2 TBSP unrefined sea salt; 1 quart filtered water
    Vessel:
    2 quart jars or 1/2 gallon
    Notes:
    Keep the brine as it is full of probiotics, antioxidants and beneficial enzymes. You can take the brine as a “daily shot” to help boost your immune system or mix with oil and spices for a salad dressing.
    Directions:
    Wash beets well, cut the tops off, and peel the skin, then slice into rounds.
    Layer into the vessel the beets, fennel, garlic and peppercorns, giving it a good press.
    Pour the brine into the vessel making sure there is enough to keep everything submerged.
    Top with glass weight.
    Set it on the counter, out of direct sunlight for 7-14 days. Start testing around day 7 for desired level of sourness.
    Brine will become cloudy as fermentation starts to take place, and if you are using red beets the brine will be tinted red/pink.
    After desired level of fermentation is achieved, screw lid on and store in fridge for 6-12 months.

    Hey y'all I bought that kit last year! I have been so happy with these products. I have bought more items like the box of weights ect. I have been trying different recipes for sauerkraut, pickles and pickled peppers and it has been fun. I have made some hot sauce and a not so hot hot sauce very warm sauce for my wife. Using more belland sweet peppers and carrots to add sweet flavor and temper the hot peppers.
    So I guess I am doing the garden thing but now I am getting more into the preservation thing. I am on a fixed income and so I have to buy what I buy in a creative manner never paying full price for anything. Such as buying a brand new pressure cooker still in the box never used from the 1970's for $10 dollars at an estate sale. I can then sell, trade, swap or use this item. Buying an $89 item for $10 non taxed dollars is a crazy good addition to the equipment available to me. I once bought a good sized box of new canning lids in the boxes at least a thousand lids in all for $10. I will never use all of these in my life time!
    The point is not bragging what I can do but to let folks know there are ways to get what you want and need in different ways and God will bless you so that you can find what you need all you have to do is ask. I look in dusty closets and ask someone working the sale how much for all of these if they say $10 then I say thank you God for this. That very day a person asked me how much did you pay for all those? Before I answered I asked if they wanted some of them the answer was yes. I gave them about 5 boxes of 10 lids and said I got them all for $10 dollars so you can have these for free. In my mind I am passing God's blessings forward to someone else. Never ever say Oh I can not do that because God will always make a way if you believe and put in the effort.

    Another thing to be mindful of is that, if someone is allergic to penicillin, s/he may not be able to eat fermented foods.

      @@thepadillafamilyhomestead penicillin is made from mold. Similar process to fermentation.

      I will do some more research into this. I glanced really fast when I saw this and didn't see anything to be concerned about, due to the mold being a different strand of penicillin. But I definitely need to do more research since I recently gained an allergy to the medication

I know that you’re also launching a new business and taking on studying herbal remedies. On top of your normal chaotic, busy lives, lol.     Thank you guys for this video. I used to have a small farm that I canned all the time (never fermented) and had to sell when I started travelling for work full time in a RV. I've had issues on ensuring I get good quality foods during the winter and since my pressure canner is huge (double decker) so cannot have that weight in my RV so it's in storage, I need a way to preserve veg that I can get in the summer months. I cannot freeze either as RV fridges/freezers absolutely suck. So now after watching this video, I have ordered the kit to ferment and cannot wait till it arrives so I can try it out.

    I was so excited we got fiber but ….. There are so many on the line that we are allowed two devices. It takes more. I have to admit I have iPad on most of the time. Different networks will throttle down although you can switch to another. I assume they cater to cities.

    Thanks for sharing. It is awesome that your kids are enjoying the veggies. I grew up in an Eastern European family, and we ate tons of fermented/pickled foods. I love them, but I've struggled to get my kids on board.

      Fortunately for us, our kids love pickles. A lot of our fermented veggies are fermented with garlic, pickling spices and dill. If we make them taste similar to pickles, the kids eat them like crazy

    I have to ask - in my ignorance of fermenting - is this something like sauerkraut, or similar??? For some reason I equate fermenting with vinegary foods ????? Thanks for showing me how easy this is and the health benefits !!!

      Fermented foods taste like what ever seasoning, herbs, spices you use. We like dill pickles and so we use a lot of the same ingredients to ferment our veggies

    Good job Nathan zoning-in using the knife !, we can never be too careful. I will try beets again this year as mine did not do good last year. Yay for Redmond's real salt. How does the ferment not taste overly salty ?? Your jar looks like a old-fashioned candy-store jar full of fun candy. I love beets !! That pickle-pipe looks like an awesome invention !!

    That's the next issue about growing your own food.
    You grow what you like to eat.
    Then you have to know how to cook it the way your family likes to eat it.
    Then you need to learn how to preserve it so you'll like to use the product.

    Hey there! Thanks for the video! I've really been trying to get into fermenting as I haven't been a huge fan in the past. BUT I will say...i had a beet "kraut" of sorts from a local place near me and I really enjoyed it. Checked the ingredients and the only different thing was cumin! I LOVE CUMIN! So, sending this along as a suggestion for an additive because even I liked it! Lol

    I had never heard of kohlrabi until you talked about it. I grew it because of you and fermented it and it is so good!! I also mash it and use like potatoes but by far the best is fermented. Thank you for introducing me!!!

    Lol we’re in Arkansas too, waiting for the new fiber internet 🤞🏻 honestly we’ve gone the past 9 years without internet bc there are no good options where we are. They said our area should be done in September but not to expect to be connected until December.

    Next time don't pre-cut off the root end of the beet. Leaving the root end on leaves you something more to hold on to when slicing them. Nice video. 😊

    Love your energy. Ok I tried this. I grated my beets and got distracted for about 30 min. They turned greenish from bright yellow. I still but them in the brine. You think they are ok? Also I have had beets especially golden ones get black spots on them when i cook them . That is steamed or roasted. Usually cut not whole. Any ideas?

    I want to love fermented foods but I don't so far. I also don't like pickles or vinegar based things. I have fermented carrots and green beans but not beets. Do you have any suggestions on what I should try? This video is great! Love watching you guys ❤

    Where do you buy your bronze fennel? I can’t find it. Not even on Amazon. I like fennel but I don’t like the licorice taste. It’s too strong. I don’t like black licorice. But the other flavors of the fennel I like if that makes any sense lol.

    When you have fermented food does it all have to stay in the fridge or only after you have opened it? Like can it stay on a shelf until you open and use it? Like in a pantry or cellar?

      After the initial fermentation process, it needs to be stored in the refrigerator or it will keep fermenting

      So when you guys do big batches of different veggies to ferment to have over say for example a period of 7months all your varieties are kept in the fridge. Or they sit on a shelf in a pantry continuing to ferment until you open?
