RIP Dom. I wish I had been able to make my New York pizza pilgrimage before you were gone.
It was over 40 years ago since I've had New York pizza and I can still taste it. I know Italy is its' birthplace, but think there's something about Big Apple pizza that can't be recreated anywhere else.
He was a legend and pizza master. He made his pizza simply but the taste was elegant. I feel so blessed to be in his presence while he made pizza. Thank you for sharing your thoughts. We both can still taste his pizza. For that we are blessed.
I’m in the second best place to get a good slice (there are people who argue it’s the first, but I always say there’s something in the water that makes NY pizza the best) …. New Jersey .. but anyway.. I never got to visit DiFara’s - one time I found myself in Brooklyn and saw I was right down the street from the place (while Dom was still with us) the line wrapped around the block as per usual and I just didn’t have the time to wait.
Will make it over there one day and wait to get a slice to experience it.

This is very relaxing.I could spend all day watching Dom make pizza and listen to his music. Whilst eating the pies of course. The man listens to classic Italian folk songs and opera.

I live in Manhattan and still haven't gotten around to Di Fara's, cause I know the wait time is exceptional unless you get there bright and early.

Dom pulled it out of the oven with his hand then carried it to the tray with his bare hands for 4 seconds. That’s insane lol
Very true! I saw him put the pizza in with a peel and when it was done he pulled it out with his hands! I was astounded!!! The hands of a pizza master... and Don was a master!
I actually saw him pick up a hot pizza pan out of the oven with his thumbs and forefingers! He probably had no sensation in his fingers by doing this

50 years x 6 days a week and let’s say they sell 100 round whole pizzas a day so that’s 600 a week, 600 a week x 52 weeks in a year which is 31,200 and times that by 50 years so that’s 1.56million

Can you get a pepperoni pizza there? I've only seen them make cheese pizzas in these videos.
I don't think you can get pepperoni in New York. You can definitely get pepperoni pizza at their Las Vegas location. But having had the pizza at DiFara's, I did not miss the pepperoni.

A few questions, I don't know if can answer, but it doesn't hurt to ask. 1) Do you know if he uses cooked sauce 2) Do you know what type of cheeses 3) what type of tomatoes 4)what type of olive oil? I use to briefly stand and watch him make his pies, but was too afraid to stand too long for fear he might think I was a pizza spy (lol). Since moving to Vegas from Brooklyn, I've had something fairly close. Dom came out here to Vegas and taught his recipes to 2 places. One bares his name, and the other is in Caesars Palace bearing the difara name. He partnered with a guy here in Vegas, they use his recipes and he gets a percentage. They're decent, but they're not the pies I'm use to. Something got lost in the translation. Since going to Mark Bello's pizza school before moving to Vegas, I want to see how close I can come, on my own to Dom's recipe with lots of practice and the right ingredients.
Honestly, I wish I could answer your questions. If you are in Las Vegas there are some awesome pizza places. Pizza Rock, Metro Pizza and Good Pie make incredible pizza. If you do find the answers, please share them with the rest of us! pizza on earth!
You certainly sound like a pizza spy to me! Did you ever think of being original, and trying to make it on your own with the knowledge that you have gained so far? Everybody has there own style and way of making pizza (and any other recipe for that matter). We need more original people in this world.
Di Fara pizza things I’ve learned.! I know the cheeses used. The olive oils seem to have been changed over time, as well as the tomatoes. The pizza sauce was originally uncooked but in recent times it sees the cooked sauce has been used on everything now. Tomatoes Vantia Pomodor Pelati, at one time and Valoroso pear tomatoes either together or another time. It also looks like he use Mutti puree. Bench flour is only All Purpose flour. It's Wingold All purpose H&R(saw full bags of it stacked in one of the videos). 75% of the dough recipe is 00 flour. He was using Caputo but I don't know which one - maybe Caputo Chef's 00 flour, the one in the red bag. Uses 3 to 4 cheeses - Grande full fat low moisture mozzarella, Buffalo Mozarella imported, Grana padana from Wisconsin, which is milder than Parmesan (which he may use that at times, or maybe that's the one provided for customers to add?, and it seems a tiny bit of sprinkled Pecorino Romano on top when pizza is done, along with 2 olive oils and the fresh cut basil. I'm not sure, but I suspect one of the oils is flavored with either garlic or hot Calabria pepper or maybe both??, Dom said his pizzas are cooked in less than 5 minutes. One important factor is that he doesn't pre grate/shred the cheeses. All those special touches add up to being the amazing products that he produced. Of course there's no way to duplicate that oven; but my guess is that if it's taking up to 5 minutes to cook a pizza that oven temperature may be in the 600 range as opposed to 800 or 900 used in traditional Neapolitan pizzas. I'd love what the other flour is that he uses. It could be the all purpose I saw since he had so many bags of it piled high; but it would be easy to try a recipe with using that, or bread flour, or a high gluten flour like King Arthur Sir Lancelot, or all Trumps which is a very good flour. Also, he said he makes and bakes his dough the same day; but somewhere someone mentioned a starter. So I think he may have a poolish that he makes the night before and adds that the day he makes the dough. But from all I've read from people who know his pies, the dough is not the star but what makes it great is the products he uses and the care and integrity he takes with every step of the process. I don't know if that is the secret. That is how Dom makes each pizza. For me the secret is the taste of the pizza. You'll have to try DiFara's Pizza and decide for yourself. pizza on earth...

YES, he did! I was astounded that he was able to pull a hot pizza out of the oven with his hands! And he does this all the time.

He doest use anything pre made, pre shredded he literally makes his own sauce, shreds the cheese and the basil in front of you. Takes a while but so worth it.

True! Bu for me, it was worth every penny. I would order pizza from DiFara in a heartbeat! Honestly you get what yuo pay for. There are certainly lots of cheaper pizzas around.
