  • Every part of India has its own version of the egg curry. This is the Bengali take on the classic dish. In this video, we show you how to prepare the dim'er kosha (a thick spicy gravy that can be served with luchi) as well as dim'er dalna or jhol (a lighter curry that can be eaten with rice).

    Im a second generation Bengali American! My parents immigrated here from Calcutta! Theyre elderly now, and cant really manage for themselves. Going through your videos, I've taught myself how to make the food that they grew up eating! Thank you so much for teaching this skill to overseas Indians! You have no idea how much they light up when I make stuff like this, instead of lasagna!

      Original bengali food is much different frm these and more natural and tastier...I AM ALSO A BENGALI...IN BENGALURU....IN LOCKDOWN ONE OF MY FRIEND'S GRANNY CAME HERE AND WAS STUCK HERE DUE TO LOCKDOWN SO SHE TAUGHT US D REAL BENGALI METHOD...ALL SIMPLE SPICES AND ALWAYS USE D STINE FOR GRINDING SPICES....TIMING MATTERS D MOST...THESE R JUST D COPY NOT D ORIGINAL

      @@TheKumarmanoj thats very uncharitable .every Bengali household had/has its own way of recipe preparation which has been handed down to the next generation..yours is a different recipe .doesnt mean that this is a "copy" and not original..its original to the family from where it comes..so dont knock others efforts just because its Different from yours.

    Tip: Some gorom moshla and a dollop of ghee at the end is a total game changer.
    I tried this recipe with the modification mentioned, it turned out to be the best dim kosha ever. ❤️❤️

    Today I made the egg curry as per your recipe and was hit by nostalgia. This is the kind of egg curry my grandma used to make. But my mother makes it a little differently. The gentle memories of childhood, when egg was my favourite delicacy, flooded my mind. The only twist i made in this recipe was to fry the potato pieces also until edges were browned slightly and then proceed with the same recipe.

    I live in Europe but am a fan of Indian cooking apart from world recipes. Your video is inspiring and informative!     Hi! I wanted to ask if only duck eggs can give the reddish hue on being fried. I use chicken eggs and they never develop that reddish crispy coat shown in the video. Thank you. ☺️

      Egg skin has lot of chemicals on them and of course dirt too.Even if you wash them properly the chemicals don't wear off and getting heated enter the potato instead ,which,is bad for your health .So you shouldn't .
      But these days nothing is without chemicals .😑

    In this recipe, we have used _hnasher dim_, large duck eggs with creamy, deep-yellow yolks. Have you tried duck eggs? Where did you buy them (unless you _have_ ducks, in which case, well done!)

      P.S. I can't get enough of duck eggs. But in the recent years its become very difficult to get my hands on them. Now we get it from a very small shop in a market near my house and even there we do not have a regular supply. :(

      Thank you! We are trying to make good quality videos for food from Bengal, so your words of encouragement help.
      In Calcutta, in every market there is usually this one man or woman who sells eggs but hides a secret stash of duck eggs somewhere near their feet. Ha ha. You have to ask them for it. But yes, I agree, they are not as readily available as we wish.

    I had 6 eggs so I scaled up by 50%, and I’m so glad I made more of this! It is 🤤 just mouthwateringly good. I found myself wanting a little more tanginess so I stirred in some tamarind pulp at the end.
    You could put anything in this jhol: tofu, mangsho, just alu & carrots… it would be satisfying regardless.
    I found a can of quail eggs in brine… maybe I’ll try that next for tiny dim’er dalna!

    Wonderful ! And how well the cajun music - somehow - works with this video ! As a complete weenie with regard to heat I'll have to remove the chilies , but that said I will be trying this recipe soon. I am a retired cook and have strayed pretty far from my Venetian-Tuscan roots in search of tasty dishes but until I stumbled upon your videos I'm afraid Bengali cuisine had never occurred to me .     Correct me if I am wrong, haser dim ebong mutton e thik namanor shomoye Ghee r gorom moshla ditey hoyena? Karon duto tei ekta ashte gondho thake and these two ingredients helps minimise the same (I know you used it initially, however the little pinch at the end adds up to the flavour!) ....well I love cooking and I have learnt this from the elderly people around me. I think that's the main ingredient which is missing here. P. S - I love your channel and an ardent follower and of course a subscriber too therefore thought of giving a feedback!

    Presentation is very nice.. Just one query can we use boiled potatoes instead of microwave and plastic sheet cover which you used is recommended for microwave?

      Of course! You can also add them to the pan early and let them cook with the spices. We steam them in the microwave just to give them a headstart.

      Thank you! Do subscribe for new videos every Friday. We put precise measurements for all ingredients (even salt and sugar) to make it easy for anyone to cook these dishes. When cooking you can use our website bongeats.com to get the list of ingredients and proportions by weights.
      It is best to use Bengali style kadhais, but if you can't find them you can use a wok like the one we are using in the video. You will find the link to the wok in this list: kit.com/bongeats/kitchen-set-up

      @@BongEats this link for your kitchen setup doesnt work anymore. Also wondering how you keep the kodhai so spotless? i struggle with that .. ALOT and no amount of elbow grease or Bar Keeper's Friend seems to work.

    Hnasher dim is everything, it's so easily available in Kolkata when you live in any other part of India you crave for it more .Bong eats thanks for letting me relive my wonderful memories from Kolkata.No matter where I will be no other city is close enough, I love your channel .

    For an Indian who has recently moved out of the country, and has a 3-month-old kitchen life, RUclips cooking videos are a serious and essential part of life. And for some one who has eternally lived on maayer hather ranna, you can imagine how painful it can be to pine for and then not find authentic Bangali recipes. Thankfully now, your channel is my new oasis, in this desert of over-dramatized amateur food videos! I love the fact that you share cooking tips and recipes for the most basic and mundane dishes in the traditional Bangali rannaghor, along with a healthy dose of the more extravagant ones. Moreover, you manage to make the videos so appealing and drool-worthy. This channel is perfect for the new bong cook like me who is simultaneously trying to satiate his nostalgia pangs and impress the Bangali women in his life (mothers and girlfriends alike). Thank you for working so hard for making a Bangali's life that much more joyful! Keep those beautiful dishes coming!

Ever since we've started thinking about how we want to present these recipes, it's been clear to us that we don't want to create something that simply LOOKS good and over-produced.
