You made the right choice!! Always choose family!! My husband and I got married young (22 and 20 years). When we first got married there were about 4-5 different couples who were at the ends of their lives. I asked them to share with me about what they’ve learned in their lifetimes. What wisdom could they pass on? Each of them (in different conversations) all said your car will eventually break down, your going to retire and not be at your job anymore and your house will eventually become empty BUT ALWAYS invest in your family first. They are your ministry and the most important investment as they’re eternal souls…not earthly treasures. This has stuck with me for the last 20 years. You will never go wrong choosing family!
You shouldn't have to justify your break but nice to know you are all ok (and congrats to the kids for their sporting achievements). I struggle to get organised with 2 kids and a part-time job so cudos to you for everything you manage! Family is always priority. You still had a presence in my kitchen....you made me love and use my instant pot and whether you intend to come back more regularly or not, I will continue to use your recipes! Thanks for being an inspiration in so many ways.

Welcome back!! When I make the eclair cake, I do always use the can frosting. But a tip for for spreading is to microwave it a minute, stir until smooth, and just pour it on top! Then put in the fridge to set!
We make that chicken marinade with turkey minus the horse radish...it's Moroni Turkey marinade. Moroni is where they grow the turkeys. At least they used to. Not as many do now.

Glad you're back! I, too, am one of a family of 6 sisters- no brothers. We were all born from 1957 to 1967; I am the third daughter and I was born in 1960. We also love Chocolate Eclair cake, but recipe is different. The basics are the same, but for the filling, with the pudding and cool whip, we add an 8 oz. carton of sour cream, a tsp. vanilla extract, and(secret ingredient), about a 1/4 tsp. cinnamon. You don't really taste the cinnamon, but with the sour cream, it gives the filling a really rich pastry cream taste. Also, for the chocolate, we don't use frosting. I melt a 12 oz. bag of chocolate chips(dark or milk, according to your preference), and slowly stir in 1/4 cup of heavy cream. We top it with chopped pecans before putting it back in the refrigerator to set for about 30 minutes. And I agree-so easy but so good.

Family focus is #1!!! It's why I was a stay-at-home mom most of my adult life. It was the best choice for me and for my family and I don't regret a minute of it! RUclips didn't exist at all yet. In fact, neither did home computers for most of that time! Anyway, I've enjoyed living vicariously through you ladies for a long time now, and have made and eaten LOTS of your recipes. You've made my retirement years very enjoyable, so thank you! ❤❤❤❤❤❤
Yay so glad you are back. I make the chocolate eclair all the time for church potlucks. One trick I have found is add a little milk to your canned frosting. Mix it with a whisk and keep adding milk until it ribbons off your whisk. Then you can pour it on the eclair. I have never had any issues with it setting up.

I’m a chocoholic so I make this using chocolate graham crackers and chocolate pudding, so good and chocolicky!!
