    Hiya :)
    Today I made a batch of coronation chicken! Created back in 1953 for the Queens coronation…and still very popular to this day. It’s basically a curved chicken salad…and it’s delicious :) Fantastic on a baked potato, sandwich or even on it’s own with some leafy salad. Everything I used will be listed below.

    What did I use?
    A large frying pan and a medium frying pan
    Adult servings-
    3 - 4 adults as a baked potato topper or sandwich filling
    How long?
    10 minutes prep and 15-25 minutes cooking time
    Ingredients used -
    * 2-3 Chicken breasts
    * 500ml (17 oz) Chicken stock
    * A large knob of butter (or oil) for frying
    * 1 Small onion - finely diced
    * 1-2 Bay leaves
    * 1 Tablespoon mild curry powder
    * 1 Teaspoon Turmeric
    * 1/2 Teaspoon brown sugar
    * 1 Tablespoon tomato puree
    * 60ml (2oz) Red wine
    * 60ml (2oz) Water
    * 200g (7oz) Mayonaise
    * 125g (4.4oz) Creme Fraiche
    * 1/2 Tablespoon lemon juice
    * 2 Tablespoons dried apricots - chopped
    * 2 Tablespoons sultanas
    * Salt & pepper to taste

    Great video Cheryl. I love coronation chicken with pasta mixed through. I make the sauce a little more loose so it wraps the pasta. Like a cold coronation salad, served with side salad of course.

      I actually have spaghetti pasta with my homemade hot chicken curry or any curry recipes a change from basmati rice as its creamier and buttery yummy

    I make this a lot when I have leftover roast or rotisserie chicken. It's also great for using up herbs or other fruits that are getting tired. Last time I added some fading grapes, celery and scallions and the end of a container of plain yogurt. It may not always be the purely original recipe, but it's always delicious and a great hot weather lunch.

    Great easy recipe, coronation chicken in the states has become so complicated with nuts, halved grapes etc. Thank you. Love the Jasper mug.

      I don’t think I’ve ever seen coronation chicken served anywhere in the USA. It isn’t a common food here at all. We do have chicken salad, which is similar to this but without the curry. It’s cooked chicken, mayonnaise, a splash of lemon juice, salt, pepper, diced celery, and then often the grapes and pecans. I just had that for lunch actually. 🤤 But it wasn’t a complicated thing to make. I used rotisserie chicken from the grocery store, so I didn’t need to cook anything on the stove.

    Morrisons actually sell a lovely one. It’s so nice that I ate it twice today. For lunch in a wrap with salad and for dinner with salad and new potatoes. The tub is small so there isn’t much left….maybe I’ll have another wrap tonight to finish it off and yes I know I’m greedy but it’s just delicious especially with watercress in your salad. Would probably be nice with Doritos too. My favourite food at the moment but a shame it can’t be frozen otherwise I’d buy it in bulk! 😋😋

    Thanks Cheryl, that's another idea for the jubilee BBQ. The platinum trifle? Ummmmm too faffy for me, I'll just do a normal trifle and try putting a Union Jack on the top with red white & blue sprinkles. 😀

    I have some honey whole wheat buns on to raise and i wish I had the ingredients to make this. Might go out tomorrow morning and get some golden raisins and dried apricots. Husband will think it is "lady food" 🤣 good, because I can have some sandwiches for myself then. This is the first time I have heard of this recipe.

    I've never had curry. I've lived mostly in very isolated rural areas, no Indian restaurants and small grocery stores that just sale basic groceries. This looks like a easy recipe to try.

      Wow! Never had curry??? You posted 11 months ago--have you tried it yet?? Not sure this is the recipe to try it with, but better this than nothing nothing at all! Curry is great! And quite versatile.

      @@skontheroad yes! I had "curry" 4 times since then and I have found out that having curry is like saying, "I'm having fruit!" Different curry dishes means different curry flavors! So far, all have been very good. 👍

      And correct! Many people also think that curry is spicy. It isn't necessarily a spicy dish. It's the other spices in "a curry" (a typically British expression) that bring the heat. But to taste and enjoy the curry flavor, one needn’t add a lot of spice. Happy you have been introduced to a new flavor!!

    Lovely to see this original recipe from 1953 STILL bringing us a decent recipe for Her Majesty's Platinum Jubilee celebrations. Over here in NI, Her Majesty means SO MUCH to us....Monarch, legend, Queen...May Almighty God bless her, and give her many, many years to reign over us! 🇬🇧🇬🇧🇬🇧🇬🇧

    Love this recipe. Bought a coronation chicken roll some time ago, not necessarily the traditional recipe, but it included flaked almonds.. Made a huge difference..

    With cold cooked pasta added this would make a fabulous summer salad to take out with you for the day instead of having to go to a café and buying something. Easy to eat as well,, not messy. Any chance you could also show us how to make a quiche which is the new coronation dish, a favourite of mine but I always struggle with what to add other than cheese, cream, eggs and milk etc. I admit I'm not a broad bean fan so wouldn't use those anyway but spinach on it's own seems a mite tame.
    Will enjoy making this recipe when I go out for the day next week, it will be perfect. Thank you very much, from Co. Kildare.

    I'm American, but I lived in the UK for a year back in 2010 and always loved this! I didn't know how to cook at the time, and my English host mom Laura taught me to make this! Still laugh about how I asked "What's the difference between a sultana and a raisin? These are special raisins of some kind?" 🤣

    I'd have to make it without the sugar or fruits (not a fan of combining fruit and meat), but the seasonings could provide a variation from my usual cashew curry chicken salad. Thanks, Cheryl, have a great weekend!

    I lived in london for 10 years and at lunch time I ordrered sometimes a coronation chicken sandwich. The first time I ate this it was absolutely delicious !

    This looks delicious and very much of the original recipe - I followed the fortnum & mason version and added flaked almonds, chopped dried apricots and golden raisins. You are right it’s absolutely delicious xxx

    excellent as always Cheryl. i had never heard of this dish and it sounds like a difficult dish but is surprisingly easy, i’m not a fan of onions seeing them as a flavoring instead of a solid made this dish for me

    Thank you! I mostly followed this but substituted a dollop of my mom's tomato relish, her chutney and a spoonful of marmalade in honor of The Queen & Paddington. Wow! It was good! I'll be making this more and serving on salad this summer.

      I was always taught to add the heated major greys- then sieve it through like the onion tomato mixture.
      One of my favorites of all time since I discovered it in the late 1970’s when I first moved to London

    It reminds me of a recipe I made for a brunch, some 20yrs ago: 3 poached chicken breasts. And a coating, made of joghurt, salt, honey and ground hazlenut, cooked (to reduce the moisture). I diveded that by 3. And added different currys to each. Coated the chicken, wrapped it up in cling film. To rest overnight. Next day, thinly sliced it up.
    A friend of my gf had never dared to order a dish at any asian restaurant. 'Cause she was not familiar with it.
    Here, she was able to try just a little slice. And loved 'em all. ! I've created a convert !

    Don't know about the UK, but the 50's were a hideous time for US "cuisine". My favorite example is tuna fish jello salad.For myself, I prefer plain foods.

    Interestingly enough, a few years before Queen Elizabeth was crowned, in 1944, two chicken recipes were closely associated with the fourth Presidential inauguration of Franklin D. Roosevelt over here across the pond. FDR specifically wanted Chicken Ala King served as the main course at the luncheon. However, his wife Eleanor's housekeeper and cook refused - her reasoning being that she couldn't keep it hot for 1800 people, so she switched to cold chicken salad on a lettuce leaf and to make matters worse, dessert was cake with no frosting. You'd think if you get yourself elected as President four times in a row, you ought to at least be able to decide what's for lunch. 😁

    I was at a meeting about 15 years ago I had heard of it but did not know what it was so one of the sarnies Coronation chicken took a bite and spat it into my hand discreetly cold curry sarny no that's , Sultana's in a curry no disrespect but a no no for me , there's was a few cafes near me who used to put them in and if I go to a strange cafe and fancied a curry always ask had it got them in .
