  • Mangoes are believed to be the king of all fruits! The intense flavour and sweetness of seasonal ripe mangoes are simply divine. As the summer season is almost ending, mangoes will soon be scarce in the local markets. So before it disappears for a whole year - let’s bake some flavoursome Mango Cookies at home!
    These mango cookies have turned out to be our favourite! They are crispy from the edges, a little tender - almost cake-like in the middle and offer a delightfully sweet, chewy and creamy texture to tickle your tastebuds. The recipe is quite simple and requires just a few common ingredients available in every Indian kitchen. So here it goes 👇
    ➡️Preparation time: 20-30 minutes
    ➡️Cooking time: 10-15 minutes
    🔸️🔸️ Ingredients you’ll need 🔸️🔸️
    For Mango Cookies ⬇️
    🔸️Ripe Mango - 1
    🔸️Unsalted Butter - 100 gm
    🔸️Sugar (Powdered) - 1 cup
    🔸️Egg Yolk - 1
    🔸️Flour - 1 cup
    🔸️Baking Powder - 1 tsp
    🔸️ Cooking Instructions 🔸️
    🔸️Cut and peel 1 ripe mango into pieces. Blend the pieces to make a fine puree out of it.
    🔸️In a bowl take 100 gm unsalted butter. Beat well using an electric hand blender or a hand whisk. Make sure the butter you are using is at room temperature.
    🔸️Sieve 1 cup powdered sugar into it and keep beating until the batter turns fluffy and creamy.
    🔸️Add 1 egg yolk. 1 tsp baking powder and a few drops of Mango essence. Beat for another few minutes.
    🔸️It’s time to sieve 1 cup of flour into the mixture. Now FOLD the batter using a spatula to mix the flour well. Avoid beating or whisking the flour - the flour is the last ingredient to add to any cake, pastry or cookie mixture.
    🔸️Now pour the mixture into a piping bag and start giving shapes to your cookies directly on a baking tray. The tray should be well greased with butter/refined oil and have butter paper/foil as a base.
    🔸️Preheat your oven at 185°C for 5 minutes. After that, bake the cookies for 10-15 minutes at 185°C.
    🔸️Leave the cookies on the tray itself after taking them out of the oven. All your cookies will turn crispy once at room temperature.
    🔸️Freshly baked, crispy mango cookies are ready to savour. You can store the cookies for up to a month inside an air-tight container.
