It's our last day on the farm and we decided to catch clean and cook a duck. Because we didn't have a lot of time to do a peking duck dish, we did a whole fried duck outdoor cooking with a Hoisin duck sauce. That sauce was so delicious on the crispy duck skin. We later took a shower by the river to end our laborious farm day.

I really enjoy watching and getting to see just how beautiful our island is, the greenery, setting, and all those different variations is so breathtaking and refreshing it also reminds me of my grandfather we wud go as kids wid him an camp out so much different ways and visit his friends farms ,yet emotional at times to watch but I appreciated it so much because you show people from all walks of life that our island has so much to offer not just the bad outlooks n one stereotyping of the island thank for sharing, continuing blessing and success throughout 🙏🏾💙

Cuz, when you revisit to cook the curry goat for Jess, come during otaheiti apple season! There's a huge tree on the property with the the prettiest dark red and big apples I've ever seen. And I think I heard Jess say there's 10 apple trees!!! She also has starapple and jackfruit and of course mangos, oranges and guinep!!!! Wow!! That duck looked crispy and divine!!❤️

How was the taste? Duck can be "gamey" that's the description I'm told. I did one some years ago for my brother in the oven. It tasted very interesting😳! The next time a chef buddy of mine told me to soak it in lime juice. It came out a lot better. I injected it with a Cajun marinade the last time without soaking it. It was pretty decent. Let me add, the initial time the taste wasn't all that bad, it was just interesting. Guess my tastebuds were expecting more of a chicken or turkey type of taste. Before that time, I last was a lil dude when I had duck, so over 30+ years. I surely don't recall the taste from then

The duck looks wikid!!! I've had it maybe every 2 months. However, it is either brown stewed or roasted. Never had it fried. But it's one of my favorite meat.
