  • Creamy tomato soup with the flavour of fresh coriander leaves.
    TAMATAR AUR DHANIA SHORBA
    Ingredients
    6-8 medium tomatoes (tamatar), cut into quarters
    5-6 fresh coriander stems, chopped
    1 tablespoon chopped fresh coriander leaves (dhania) + for garnishing
    2 teaspoons oil
    2-3 green cardamoms
    4-5 black peppercorns
    1 black cardamom
    ½ inch cinnamon
    ½ teaspoon fennel seeds (saunf)
    ½ teaspoon cumin seeds (jeera)
    2 dried red chillies
    ½ teaspoon red chilli powder
    1 tablespoon gram flour (besan)
    Salt to taste
    Method
    1. Heat oil in a pressure cooker. Add green cardamoms, peppercorns, black cardamom, cinnamon, fennel seeds, cumin seeds and broken dried red chillies and sauté till fragrant.
    2. Add tomatoes, coriander stems, chilli powder, gram flour and salt, mix and cook on high heat for 1 minute.
    3. Add 4 cups water, cover and pressure cook on medium heat for 8 minutes. Set aside for 5 minutes and open the lid when the pressure is completely released.
    4. Blend the cooked tomato mixture into a smooth mixture and strain in a bowl. Add 1 tablespoon coriander leaves and mix well.
    5. Serve hot garnished with some coriander leaves.

    I transcribed it for convenience:
    1 pressure cooker
    prepare ahead -
    6-8 medium tomatoes - cup to quarters
    5-6 coriander stems, without leaves - chop to 1 inch, chop the leaves
    add to heated oil in order:
    2 tea spoons oil - add to pressure cooker
    2 green cardamons
    ~5 whole black peppercorns (whole black pepper?)
    1 black cardamon
    1/2 inch cinnamon stick
    1/2 tsp fennel seeds
    1/2 tsp cumin seeds
    2 (or a few) dried red chillis
    add the tomatoes
    add coriander stems
    1/2 tsp red chilli powder
    1 tbsp gram flour
    salt to taste (in video she adds ~1 tbsp)
    cook for 1 min. on high heat
    add water to about 1 inch lower then the tomatoes
    close lid - cook for 8min. on medium heat
    set aside for 5 min. to release pressure
    w/ hand mixer - inside the pressure cooker - turn to fine puree
    pass thru a fine strainer (as it is still a bit coarse)
    add the chopped coriander leaves
    decorate w/ coriander leaves after purring into bowls

    This is NOT a Shorba... You don't have to blend or make a puree for making Shorba as we do for normal Tomato Soup. You have to strain the water once everything is properly boiled.

      Also should peel the skin of tomatoes as they are indigestible.

      Yes buddy correct nor you have to use that fuckin gram flour for bindin because Shorba is a thin and not thick. The best Shorba I've ever tasted in my life is of hotel peninsula grand in sakinaka and still i go at any time after 12 am just to have the shorba and the taste is really awesome
