Ha! I actually did this about 20 years ago by accident. I was a novice cyclist but fit from rowing. I had 39x23 as my lowest gear ( had no idea!) literally couldnt sit down, it was brutal, took me an hour and ten minutes. Ive got 34x29 nowadays.
See a few bikes secured to racks in Manchester, with no seat posts or seats, obviously thats where you got the idea from, and did somebody bring a seat and post up there for you and an allen key or going to be an intersting and possibly painfull ride down.
dunno why but after each ride during my cooldown (maybe 2km total) I stand the whole time and I can only pedal for like 8-10seconds at a time while standing. the least amount of power I can do while standing is around 250watts and my heart rate drops down during this cooldown stretch but still, dunno why I have to stop pedaling after 10 seconds. (im in Florida and never ever out of saddle unless sprinting)
I guess this is the reason: "im in Florida and never ever out of saddle unless sprinting" To be able to pedal longer out of saddle you need to do this regularly and each time trying to do it a bit longer/harder than last time.

Cam i can tell you i miss cycling cam ! This content is...yea....! Only few cyclists can perform for prolonged period of time standing ! Its not the most aero or energy efficient ! Its impressive but i think you can make way better videos !
Next time remove the saddle but leave seatpost there. Should work as an additional motivator to ride faster.
