I have pounds and pounds of oats and have been wanting new ideas to eating them but never thought of savory and I’m so excited I can’t wait to make this for my brunch bc it’s 2 am and I’m watching food cooking tutorials. But… I like my porridge and oatmeal, piping hot. So I’ll have to be cooking mine up again and add my poached egg right out of the hot water, onto the top of that delicious oatmeal congee! Yum! Good one! Thank you! 👍🏻

Really interesting re-interpretation for chao. I like the idea of savory oatmeal and I think your version is very innovative, but I'm not sure that I would like the texture of oatmeal over the traditional rice as a base. :)
I wouldn't recommend that as a straight substitute. If you don't have mushroom powder, then use a vegetable stock and flavor it with the mushroom soy. That should help your soup base.
"Dusting off" your oats- (using a siev or strainer, with smaller holes) works even better! No "slimey taste/feel" in your mouth, no slimey-ness hanging onto the edges of your bowl! Tada! Problem solved!

You'll need an immersion circulator like an anova,Joule any one of them really. Or you can always sub a soft boiled or even a poached egg.

You should try it. Cook it like how you would cook the rice, until it over expands.
Curious to try to do this with steel cut oats (they are healthier), but cooking time is obviously very different.

It just says "mushroom seasoning". You'll find it at any Asian market.
