Really enjoy your vlogs, especially the desh ones. Bengalis confuse our rice dish's. There are three as far as I know in Bangladesh ....The first restaurant makes Akhni(meat or chicken..simple, less ingredients ,flavour but nice)or Pulao(only rice no meat or chicken,but simple ingredients and flavor) .....the second restaurant does the Biryani Pakistani way. Full of different ingredients and flavor...the third restaurant is also Akhni...

Chef, Would love to see you go to the veg and meat markets to follow along as you pick out from the many vendors the best of ingredients for inspired dishes to be featured, and then see those very same ingredients cooked back at your flat or kitchen rental. Talk about chef tips to look for in freshness and quality at best price in farmer's market setting. Devise a mini menu for each show (maybe in 2 or 3 parts,) with a veg dish, a meat dish, a starch (rice, potato, dal, etc.,) a beverage, and a desert that all compliment each other or have some traditional/regional/thematic connection. Back to basics, or a fusion of traditional and BIR techniques - summon all your skills, Chef, and break that inspiration box wide open! I assure you we humble home cooks will be inspired along with you!

One of the most densely populated city Dhaka and you’re in old Dhaka which is even more dense and crowded. Should show decent neighbourhoods which has all the modern necessity like Gulshan 1 and Gulshan 2, Banani, Dhanmondi.

We call that , 'tehari', not byriani. But the shop's name is Haji Byriani. It is an exciting dish for those who love tehari and had never associated nuts and raisons with byriani because Dhaka byriani mostly does not have nuts and raisons, they (Dhaka Byrianis) do however include sour plums .

Best biriyani in Bangladesh is made by Mr Iqbal. This is not even close trust me.This is more like tehari. Mr Iqbal s catering mainly cooks for weddings.
I enjoyed it, but I worry about the ice cubes - being from the UK - don't you fear the local water making you ill???

I think that if you are serious about biryanis,. you should go for the best rice possible. But never brown basmati rice. That thing is gross man.
5:30 You are so like my aunt. She needs green birds eye chillies with her food. For biryanis, I was served a "tamarind-chilli pickle." Once you try that, you'll never go back. Maybe they have it in Dhaka too?

What does a serving of biryani cost there, in UK prices have gone high, over £10 now nearly £15 in places?
I miss that place (Dhaka),used to live in Banani thirty odd years ago and never been back since. I’d love to visit one day just for the food.
Mashallah beautiful looking rice and meat, I’m from Pakistan but born in U.K. the second one had the Pakistani biryani look where as the other was like a gravy based pulao. All equally beautiful and may Allah bless my Bengali brothers

They've basically redefined the dhakaya style kacchi biryani. Also the mutton halim at kalabagan named mama halim is one of the most famous in all of Bangladesh
