We eyeball the ingredients when making kolach or bramborak, yet if you would need measurements if you wanted to try it without having to travel across half the world. Just get off your high horse.

when I make tamales with my mom we literally use the same ingredients you're using, but in the region of Mexico that we're from (Zamora, Michoacan) our masa is not white: we add a little of the 'spice paste' into the masa and we knead the dough for like 45 minutes straight. I'm not sure what region of Mexico your tamales are from, but if you put that much lard, they're 100% legit; THIS is cultural appreciation so it's a double thumbs-up for me.

The most special thing about tamales is the array of things you can stuff on them, last month my girlfriend made a wellbunch of them to take to her relatives living in san antonio and she made some sweet tamales with chiplote and chabacano mermelade and they were absolutely tasteful the ones made from cajeta those were the winners tho.

North Mexico (smaller, greasier) tamales are way different from Center Mexico tamales (bigger, with crumbles), that are different from South Mexico tamales (tamales oaxaquelos: large as center's, thin and greasier as north's, but with more herbs and using banana leafs instead of corn husks)

They are sweet tamales. We change the dough a bit. We add sugar, cinnamon, and raisins. (Maybe vanilla extract sometimes) We also add pink food coloring to tell apart the sweet tamales from the spicy or savory ones.

I have made tamales several times growing up. And I’ve never heard of whipping the lard. Usually we heat it up and melt it and mix it in like it was a liquid. Also for those trying it. Another tip to know it’s done right is if the tamale rolls clean off the leaf. That means there is enough lard. It was still great!

If you add a quarter at the bottom of the steamer it should help with keeping track of how much water you have inside, this is if you have a low standing steam rack like i do, whenever you hear the quarter rattle that means your water is running low, so add more water without touching the tamales, newspaper tube or long nosed funnel will work.

Has anyone mentioned the fact that the word tamale comes from the Nahuatl (Aztec) language not the Spanish , and it was called Tamali by them .. so technically the English name is closer to its original name than the Spanish is ..

@@ramonpena698 in spanish it is tamal. In náhuatl it is tamalli. Of course, tamal comes from tamalli, thats obvious. Tamale does not exist.
      nice try -.-
they (americans and i dont know who else) say tamale cause they don't know the singular of tamales, not because they know the nahuatl etymology.

@@nataliatc1 So tamal is also wrong if you go to the original language for what it was called. It's not a problem that when a word is translated the spelling changes.....that's just how fucking translations work.

@@nataliatc1 both the anglicized and "spanishized" versions are incorrect given the food is Aztec in origin so you can't claim one languages version to be superior and the other to be non-existent when both are just as (in)correct. Language adapts and changes when transitioning between cultures and there's nothing wrong with that. A word exists if enough people say it does.

Thank you for spreading the word that lard isn't really that bad for you

Neither is regular butter, supposedly. All the hate is apparently due to lazy research/bad science. In other words, the general rule is to pay attention to your diet and how the food you consume affects your body.

Dixon Triconderoga butter is actually pretty bad for you in terms of the kinds of fats it contains (bad cholesterol, saturated fats). However, it ultimately all lies in moderation.
That being said, lard is far healthier than butter. I'd recommend it over butter (besides, butter has that butter taste and personally, I dislike)
